Yuuuummmm. I made a batch last week when I was craving pumpkin pie, most of them got eaten on the trip to Vegas with DH's residency. I think I'll have to make some more this weekend.

Here's the one I got from my cousin yesterday. Did I mention it? Man, I don't remember doing that, but I totally got this recipe: (too computer dumb to make it clicky, sorry!)
Does anybody have a recipe for pump choc chip cookies that is more "cookie" than "cakey"? I have tried several different recipes and am still looking for the perfect, almost chewy, larger crumb cookie than I have been able to find so far.
Nope, sorry. The ones that I make turn out more cakey - it must be the pumpkin.
This is what I'm thinking too as I've only ever seen cakey pumpkin cookies.
I'm no baking expert and I may be off base here but I think the more crumbly kind of cookies are because of the butter /flour ratio and usually the only wet ingredients in those cookies are butter and eggs. Since pumpkin has so much water in it I don't know how you'd go about getting a crumbly texture.
Again I could be wrong but it makes sense in my head

PUMPKIN - CHOCOLATE CHIP COOKIES 2 c. sugar
1 1/2 c. butter
3 eggs
1 1/2 c. pumpkin
1 c. chocolate chips
1 tsp. ea. allspice, cloves, nutmeg, and vanilla
2 tsp. baking soda
4 c. flour
2 tsp. cinnamon
1/4 tsp. salt
2 1/2 tsp. baking powder
1/2 c. nuts (optional) Cream together sugar, butter, eggs, pumpkin and baking powder. Add baking soda, flour, salt, spices and vanilla and mix well. Fold in chocolate chips. Drop onto baking sheet and bake 15 minutes at 350 degrees.
