Great topic! I've been trying to stock up on freezer meal and crockpot meal options cause I know the bigger I get the less and less I'm going to enjoy spending time in the kitchen!!
Salty - look on allrecipes for chicken taco soup. It is SO good
Beef - on skinnytaste.com, try her shredded beef. She does hers in the oven or a pressure cooker, but I did it successfully in a crockpot a few times. It is SO yummy. Please note - we really like spicy food, but 4 chipotles is too many, 3 was just right for us.
My husband makes the BEST BBQ PULLED BEEF EVER in the crock pot. Unfortunately I do not know the recipe for it right off the top of my head, but I can ask him later if you are interested.
My husband and I love, love, love this Taco Soup recipe, found it on the weight watchers website and it's delicious! I'm gonna make it this weekend cause we may be getting rain!
A pork recipe we use for just BBQ or brunswick stew is to put a boston butt with a little sea salt and liquid smoke in the crockpot. Super easy and turns out great.
Sometimes we use the pork in brunswick stew - it's an all can recipe but I may try out some frozen vegetables.
I don't have the exact measurements but I think it's 4 16oz cans of diced tomatoes, 1 can of sweet corn, 1 can of cream corn, diced onion (however much you prefer), 1 10oz can of chicken (you could use fresh just boil & shred), the pork, (also can add ground beef), 1/2 cup bbq sauce, 1 tablespoon white vinegar, little salt & pepper. I think thats all but brunswick stew is something you can add a little of whatever to depending on your taste.

If we're craving pulled pork, I'll grab a pork butt or shoulder, throw it in the crock pot and fill it with root beer. I know, sounds odd. But the meat comes out soooo delicious! We usually have 3 - 5 different bbq sauces on the table so we can really "personalize" our food!
