I just recently moved to Texas from Ohio, so I've never experienced a winter here. My first baby is due January 18th. What kind of clothes should I plan on buying for the first few months for my baby? Thick? Then? Long sleeve? Short sleeve? I'm completely new to all of this. Help!

Unfortunately our winters are very unpredictable and vary a lot in how cold. I would aim for a mixture of fleece (thick) and cotton (thin) long sleeve things for NB and 0-3 month sized items. Depending on how big your baby is, which no one can predict!, you might start needing short sleeve items for 3 month size with long pants. Once we hit March and April our weather becomes even more unpredictable with short sleeves and pants one day and jackets the next.

I plan to put her in a long sleeve onsie with baby legs. Just in case I will bring a warm coverall. The winters here are usually mild, but only freezes maybe once or twice a year. Last years freeze was nuts and afraid it may happen around my due date. Texans can not drive in the ice and snow.
LO was born Jan 4. When we left the hospital I wore yoga pants, a tank and a light zip-up hoodie. A week or two later we got snowed/iced in. LOL you just never know.
I would plan on layers. We mostly did short sleeve onesies, sweatpants, and a long sleeved layer/jacket if we left the house. One piece sleepers are good too. LO was usually swaddled or wrapped in a blanket while I held him, so he wore less clothing than I expected. It's really easy to overdress a baby, especially here in Texas where it (usually) isn't really that cold. Assuming you keep your house at a comfortable temp (same with stores, church, businesses, etc) you don't really need to bundle them up inside, and going from house to car you can toss a blanket over LO and be just fine.
