I just made this...Fritatta di spaghetti al pomodoro (simple tomato/basil sauce). Brings back memories of eating slices of it cold at the beach in Capri. (slice it up like a pizza and eat...mmm buono!)
Basically take any leftover pasta you made..any sauce (I prefer
simple pasta w/ tomato sauce but a white sauce, creamy with bacon/peas,
or pasta w/zucchini, whatever is fine. I don't think a bolognese would
be good with this as it may be hard to keep it all together. Put a
little oil in your non stick pan/skillet, heat the pasta, stirring
around a few minutes. Beat some eggs (I used 4 here), you will need
enough to coat the amount of pasta you have. Lower the heat (you don't
want scrambled eggs and pasta! LOL) Pour the eggs over the pasta and
quickly coat it evenly, spread it in the pan and pat down...cover and
leave it on low. Check occassionally and run your spatula around the
edges...when you can check the bottom and see that it has cooked and is
solid take a large plate/platter place over the skillet and flip
it...slowly slip it back in the pan so you can cook the other side a
little. You can sprinkle some parmesan cheese on top. Remove from pan
by slowly sliding it off and on to a flat surface (cutting board or
platter). Let cool a little and slice like a pizza. Buon appetito!!
This can be eaten cold the next day which is my favorite!! Perfect
picnic item to bring to the park or beach
and last night at 9 pm since I was craving chocolate chips cookies thanks to the post I saw...I was baking them from scratch only to eat 1/2 of one and not want anymore when they were done. lol

The ultimate food - just showed DH - he thinks its awesome, its SO on the menu for the weekend!
the key is to make sure you put enough eggs and that you let the one side cook really well so that it doesn't break when you flip it. Thats why you pat it down to make it all stick together and lift around the edges and the outer edge underneath to make sure it is not stuck. I have had mishaps before. It happens.
