Pregnant after a Loss

Help me finish a bottle of wine.

 I hopefully wont be able to drink for a while but I have an almost full bottle of wine in my fridge that I'd like to not waste. Anyone have any recipes to help me finish it off? I used some in a pasta sauce for lunch today and I have a chicken dish for later this week but I'll still have at least another large glass left.

  • Hmmm - if it was red (although it pry isn't if it's in the fridge) I would recommend whipping up some rissotto.  Giada de Laurentis has a great recipe on foodnetwork.com.  So good!! 

    If it's white wine, I'd probably use it in pasta sauce too - but not an overly tomatoey (sp?) one.  I usually saute some garlic in olive oil, once it gets soft, add diced tomatoes and basil - let that all warm up - toss in some giant handfuls of baby spinach and pour in the wine, (leave the lid off) let the spinach wilt - add salt and spices to taste.  Let the sauce reduce a little and if you want to thicken it a smidge add some of the water from the pot where you cooked the pasta and add some grated parm.  Take off the heat, throw the pasta in the spinach mixture and toss.  I also usually roast some pine nuts and sprinkle those on the pasta - really yummy!  (And truthfully - super easy and fast!)

  • Risotto! I've only ever made it with white. (Also, not to sound like a snob, but you should keep red wine in the fridge if you can't finish it, and then pull it out and let it return to the proper temp before drinking- otherwise it will ferment on the counter and turn too quickly.)

    I had no idea!!  That's really good to know.  (Of course, red wine doesn't survive too long in our house - if we ever had leftovers they would typically be gone by dinner the next day.  Embarrassed)

    I never knew it either until they mentioned it in our wine club newsletter!  Like you, we never really had a reason to have leftover red wine though....  :)
