Vegetable Stock

I made some last night. The recipe said to discard the veggies afterwards. I know that all of the nutrients are theoretically in the stock itself and not the vegetables anymore. But... it still feels like a waste to throw away good vegetables. 

What do you do with your vegetables from the stock?

  • I have not made vege stock, but have made chicken stock with veges included.  I basically take the chicken bones out and puree everything that is left in my food processor.  It makes it more of a cream consistency than a watery consistency but it works for what I use it for.

  • I use veggie scraps. As I am cooking I save the fresh veggie scraps that I cut off of my vegetables. I freeze the scraps and when I have enough, I make stock. I end up composting the scraps.

    This exactly.  I have a container in the fridge that I dump veggies before they go bad. When the container is full, I make stock.

    Like a "cream of..." soup? We definitely gave up the canned versions of these a long time ago. I've since tried the canned organic versions, but am trying to get rid of all cans. I like this idea.

    Thanks for sharing this. With our CSA the constant flow of veggies that I wasn't necessarily planning for is taking some getting used to. I'm going to do this!

  • We make both veggie and bone stock several times a week for gut healing. I blend up the leftovers (including bones) and put it in ice cube trays. I then use it in various recipes, mostly soups. It's a pretty fine paste. I've also heard of people making dog food (sans chicken bones of course).

    We've been using store-bought organic stocks and this is actually part of what sparked my desire to change to only home-made. We had a nutritionist for DD who shared with us about Sally Fallons Nourishing Traditions book and in particular this idea.
