They are easy, but messy to make. I agree - check out bakerella.com but the recipe is pretty easy. You bake a cake and let it cool. Once it has cooled, mix it with a tub of frosting.
Like I said, they are messy and I always have problems getting the chocolate coating to look nice.
I make them for ALL parties...I do not put them on the stick and think they are simple to make. They kind of taste like donut holes IMO. People devour them, which I like because then I have no leftover cake! And you can make them days and days in advance and they are still good, which makes party planning easier (I bake the cake the weekend before and let it dry out, then make the balls and dip them in chocolate whenever I have time during the week. Sometimes I package them up as party favors.
Oh and I guess what you asked for was the recipe....1 box cake, bake as directed, let dry out (works well with leftover cake also). 1 jar frosting (you will use less than 1/2-1/2 the jar). Once cake is dried out crumple it all up, mix in less than 1/2 the jar of frosting, use more as needed. Shape into balls (or shapes) put in fridge or freezer for about 1-2hours. Once nice and cold, melt chocolate (double boiler or micro method works) and dip, place back on tray or wax paper to dry. You can drizzle, design, sprinkles, etc to your liking. They turn out super cute!
This, but instead of store-bought frosting, use your regular recipe homemade (after all, any time you bake a cake there's always leftover frosting)... Also, the butter in the homemade frosting helps them set up in the fridge easier for dipping in the chocolate then the chocolate shell holds the shape while they return to room temp and are a little softer in consistency. Think of it as a quality ingredients make for a quality product type thing. If you start with a really tasty cake, and a really tasty frosting, and really tasty chocolate you're going to have a far better end product.
Shortly after I stopped being licensed, these were coming up as all the rage... Quite honestly, I'd rather see Cake Balls/Pops at a wedding/shower/b-day above 12yo ANY day than see cupcakes, but that's just IMNSHO...
I make them all the time and have been for years. I don't usually put them on sticks, though, because they get messy.
Instead of chocolate, sometimes I use candy melts. You can do them in ANY color, so they can match any shower/party/etc. you are hosting. For Christmas, I usually do red velvet cake balls and dip them in white chocolate, red and green. For halloween, I do orange ones. For baby showers, pink or blue, etc.
You can also make them with cheesecake, or, if you don't want to make a cake, you can do oreo cookie or nutter butter cookie ones. You just crush a whole package of cookies and mix it in with one block of cream cheese, softened. Roll them in balls and dip them the same way. Those are always a huge hit too! The biggest key is to freeze them before you dip. That way, they don't fall apart.
They keep very well and are delicious. There are so many tasty combinations that you can make. I use the Paula Dean recipe found here:
