We are very picky about where we go, we all hate crowds and lines. I have always wanted to go to Critz Farms, but worried about the crowds and craziness.
We LOVE pumpkin picking at The Hallow, it looks like they aren't open just yet. Their pumpkins are very reasonable, they were $2 each for pick your own last year $1 the year before that. Free admission and lots of free activities. They change it up every year, but always have a petting zoo and a sand box, but full of corn instead of sand. Huge hit! It is never super busy or crazy and the kids love picking out their own pumpkins. We have been there on Sat afternoons when it was busy, but it wasn't super crazy and we didn't have to wait in lines to do anything. I would suggest taking a wagon if you have one.
For apple picking, we like Behling Orchards in Mexico, NY. They have activities for the kids and very reasonable apple prices. It isn't crazy there either, but can get crowded. I have been to Beak and Stiff, we liked it OK, but it was busy, crazy and you have to wait in line for a tractor or something to take you to the orchards. We ended up not picking any apples there, and I think the prices were higher there than Behling. We have also gone to Abbotts in Balwinsville, it is very conveinient and lots for kids, on weekends, but WAY over priced.
We did Beak and Skiff on a weekday last year (Evan's b-day , and it was not busy at all, but they did not have a lot of the extra activities going. We were thinking of trying Abbott's, but it will probably be a zoo.

I third Beak and Skiff.... but go during the week if you can. It does get reallllly crowded on weekends.
Bonus... they have an apple wine store and apple distillery. Yummy adult fun!
