Beef stroganoff, but with ground beef instead of cubed
Great ideas! I have about a hundred pounds of ground beef in the deep freeze, so I'm very thankful for this post!
We've been making some "french hamburgers" with cream sauce from Mastering the Art of French cooking. They are delicious and easy (but not exactly a "light" meal).
Lasagna.
And we make a dish of my grandmother's called burox that you can google a recipe for. You have to make bread dough, but if you cook much it's not that difficult. Yum!

Manwich?! You can make your own, very yummy and easy.
I unfortunately already made tacos and burgers and it's too hot for meatloaf. : (

salisbury steak - this recipe is REALLY good.
i usually double the sauce bc i like to pour it over mashed potatoes.. but i don't double the ketchup in it, just everything else.
