A friend of mine had a baby yesterday and I am looking for some good vegetarian meal ideas to make for them. Anyone have something they want to share? Thanks!
I was a vegetarian for 21 years, and in my experience there are two types of vegetarian families, those that avoid meat and those that replace it. So, does your friend eat cheese pizza, pastas, salads, etc.--essentially mainstream American food minus meat or do they eat seitan, tofu, meat substitutes like Boca burgers and tofurki, quinoa? I can give you recipes for both, but the second category is sometimes intimidating to non-vegetarians because it is a whole new product. Sometimes vegetarians like food to taste like meat, and sometimes they hate the taste of meat. Let me know and I'll send you some recipes.

Thanks msdonnas, that is really helpful. They eat mostly mainstream food like you mentioned, but also a lot of the Boca stuff. Like when we bbq, they will make Boca burgers or the "hotdogs", which are actually both pretty good. They don't really use tofu, or any of the other things that you mentioned. I really appreciate your help!! Thank you!
Also, any kind of cheese pasta with sauce (like ravioli) or spaghetti with pesto and sauteed summer veggies like squash, mushrooms, peppers, etc is really good.

These are awesome!! Thank you very much. I didn't even think of ravioli or spaghetti, and I make those without meat for us all the time. Duh. But I am definitely going to try one of the ones you suggested. They all sound so yummy. Thank you again!!

These are good then--easy for you, no special ingredients, easy to reheat or eat as leftovers, yummy
I love the lasagna and it is SUPER easy.
