I am in desperate need of simple, fresh recipes to use on the nights I work. We are so busy it's crazy, between my husbands 7 day workweeks and my 12 hour days it's amazing we actually so eat.
So please, if you have easy recipes or great websites to refer to, post them here!

We're a big fan of Kebabs. I prep everything when we come home from the grocery store and then it's quick and easy for dinner.
I cube up the meat, and put it in a freezer bag.
Then I add marinade that's either pre-made or home made depending on how inspired I'm feeling.
Freeze.
I take it out of the freezer and put in the fridge the night before to thaw.
Once thawed, put on skewers. If you're using wood and plan on barbequing soak the skewers in water for 10 minutes first.
Cook on the barbeque or in the oven on a pan.
Tacos are easy! or Fajitas...we do that once a week.
Chicken Bruschetta - I just grill chicken breast on a frying pan (season with salt, pepper, garlic, oregano, olive oil) flip them over then I take a can of diced tomatoes (I like the Del Monte brand because they come seasoned) and I put it on top of the chicken and I melt Mozzarella cheese on top. It's really good,easy and fast! DH likes it over spaghetti.

Ginger Beef - I don't bread the beef, I just stir fry it.
Tacos
Sticky Lemon Chicken
Pepperoni and Mushroom Pizza (on Olive Oil Dough that lives in my fridge always)
Note that I am not working, so I've got some time. When I was working, the crockpot was my best friend.
