What's left?

For those with gardens, etc. what do you have left to preserve this year?

 

 

I need to can tomatoes and green beans (once we get them from DH's uncle), dry parsely (in the oven), make more pesto to freeze, and possibly can some salsa for the first time.  I'm sure I'll have more peppers and broccoli to freeze as well.  I'll probably also do applesauce again this year.

  • I'll be freezing some pureed tomatoes and once our pumpkins come in, I will be roasting and pureeing those and freezing, as well as roasting the pumpkin seeds. I have more cucumbers to use up, so I'll probably make fridge pickles again.

  • Our garden was awful this year, so we are buying whatever we preserve.  I'm still hoping to can some spaghetti sauce and roasted red peppers.  I really wanted to can apricot preserves, but I haven't been able to find apricots anywhere.  I'd also like to freeze some more corn & green beans, and maybe some pumpkin puree like PP.

  • So far I've canned - green beans, dilly beans, pickled beets, dill pickles, sandwich pickles, jalapeno jelly, okra, strawberry jelly, salsa, and tomatoes.

    I've dehydrated - green beans, three kinds of mint, marjoram, basil, thyme, oregano, and parsley.

    I've frozen pureed squash for baby food.

    I still plan to can more green beans, tomatoes, peaches, apples, okra, and whatever else I can get bulk of at the FM.
