Success after IF

We are drowning in zucchini.

Help me out here, ladies.  So far I've made zucchini bread (and I'm going to make more to freeze), zucchini chocolate muffins, sauteed shredded zucchini, zucchini gratin, "fried" (baked) zucchini sticks, and grilled zucchini with other vegetables.  And we have four more sitting on the counter, plus at least three more still growing.  What else can I do with this stuff???

    stuffed zucchini is yummy!  I also make a dish that is cubed zucchini, potatoes, ground beef, beef boullion and lots of dill...sounds weird, but I swear it is awesome and DS loved it!!  

    and I got this from a friend!  I haven't tried it yet, but sounds good!

    bake a pie shell according to your recipe or directions

    sautee sliced zucchini - how much you use depends on size, I usually use a deep dish pie pan and two zucchini from the garden, maybe three from the grocery story - you're basically going to fill the pie with them - I add pepper but just a little salt, I also cook at a little higher temp because I like them a bit browned but not mushy

    fill baked pie shell with zucchini, top with sliced roma tomatoes (definitey use roma - less juice and they hold up to baking well)

    for the topping mix mayo with parmesean cheese and a handful of fresh copped basil, use fresh! - not sure how much, I just eyeball it - maybe 3/4 cup-ish of mayo, enough parm to make it more pastey

    spread topping over tomatoes

    bake at 375 until tart is hot and the top is golden brown or if you're doing this all at one time you can just broil the top because the rest is still pretty hot. I typically cover the edges of the crust so they don't brown too much

    top with some more fresh basil and serve, it's also pretty good at room temp too :)

      ooh!  my mom makes something similar to this, heavy on the basil and she cuts the zucchini into thin strips...then she adds some crumbled italian sausage and throws it with linguini!

  • I copied Benihana's zucchini the other night.  Sliced it up, sauteed it in a little oil, added soy sauce and garlic salt to taste and finished it off with sesame seeds.  it was so good!

    Now, if I could just make their shrimp sauce...man, I would take a bath in that stuff if I could!

    I was going to suggest something like this, too. Or I have also seen people make zucchini ribbons with a vegetable peeler and serve them like pasta.

    It's been a long journey. TTC since 9/06. multiple IUI's and IVF's and 4 m/c's. IVF#3 = BFP, twins, induced at 34w6d due to baby b passing away (no explanation). Delivered on 35w1d, Baby A - baby girl, and Baby B - baby boy, our little angel.
