Military Moms: What's for dinner?

I feel so stupid asking this...but when YH is deployed or at a long school, what do you eat for dinner?  I hate cooking for just me.  I tend to live on frozen pizzas and fast food on DH's drill weekends, but I don't think that's going to work on his year long deployment.

  • Yup, frozen pizzas, spaghetti, mac and cheese. Things that I can make a small portion of for certain nights. 

    Some, okay most, nights you wont feel like cooking so all you would have to do it pull out something from the freezer, throw it in the microwave. If you have a vacuum sealer package thing use it! Best thing in the world. Package spaghetti sauce in smaller portions so that you can use what you need. Make regular meals and freeze leftovers.

  • I eat lean cuisine meals when he goes to the field. When DH was on deployment I did tend to eat out fast food, and gained a lot of weight. I would buy fruit and veggies and lunch meat. Make fruit salad and sandwiches. And snack on veggies.

  • When DH was deployed I couldn't bother making myself real meals most of the time.

    I relied on frozen foods where you didn't have to make a big portion; chicken fingers, perogies, pot stickers, chicken wings, etc. I'd do 'big salads' too, with sandwhich meat or chicken and lots of veggies. 

    Other than that, I sort of just grazed for most of the time I was home. Ate little bits of whatever here and there.

  • I usually eat cheese sticks,some kind of veggies, cup noodles, mac`n`cheese etc. I dont really see any point in cooking for myself so I just stick to that. I got to admit that I have to force myself a little to eat veggies instead of junk but since her birth I just flat out dont buy it anymore.

  • I had the same post a few weeks ago! I eat a lot of lean pockets, frozen pizza, stirfry, sandwiches and snacks like fruit, yogurt, cheese, crackers. However, this last time I committed to not eat out alone including fast food and Starbucks because A) we're on one income now and B) I'm sick of being fat. So I ate fruit and veggies twice each day instead of doing servings because it made me eat less junk. I felt so much better and saved a ton of money.

  • Lol. Uhm, yeah, I'm terrible about making a decent meal when he's not around. Example, he had to work overnight last night, so I had a bowl of cereal for dinner. Lol. We too have a year long deployment coming up soon and I'm starting to prepare now. I'm planning on starting freezer meals for now and continuing once he's gone. Easy is what I'm going to need with DD going on one in May and me working on my photography certificate. I'll probably forget to eat all together! Oye!

  • Today is my day off from work...so chinese for me!!! 

    and cuddle all they long with DD!!!

  • I snack a lot; I try to get in at least one salad a day, but that doesn't always happen Smile Then I'll do popcorn, cheese, sandwiches, or I'll eat out twice a week and eat the leftovers for a couple of meals.  I used to be REALLY bad about how I ate, back before DS and when I was still working, and would eat fast food every night.  Now that I'm a SAHM, we really don't have the money for me to do that, so I have to be more diligent about eating stuff we have at home.

  • I really enjoy cooking so I'll make full sized portions of whatever and eat off that until it's gone, or freeze it for another time. Right now I've been making lots of crock pot meals like peanut curry chicken; or since local produce has been so great I might eat a giant salad or an entire melon for lunch, lolSancwiches are always a staple.Sorry for format; bumping from nook
