So...I'm thinking with the baby on the way + my birthday + Christmas...I need a better camera. I have a point and shoot Canon camera right now and I'd love to get something that captures the moments better...mainly for my little one but for everything. I don't need a professional quality one but I'm probably ready to jump into the rookie level of the SLR's. Do you have a good one that you recommend or a bad one that I can cross off my list?

i'd stick with a canon SLR if you're going to keep your canon point and shoot. that way you won't have extra computer software to keep, the filenaming convention is the same, the menu controls are what you're used to, the button positioning is somewhat intuitive, etc.
Canon and Nikon are really the 2 major players here (Sony and Pentax both get a very small market share, so I'd stick with the majors). Neither is necessarily better or worse than the other, just a little different. They feel slightly different in your hands and tactile feel (button pushing) is just personal preference.
I started with an XTi eons ago (ok, 4 years ago) and it was great. Actually started my business on that thing.
The entry level cameras are all pretty similar in features, so I personally would get one of the cheapest ones and spend my extra money on a better lens. don't get the kit lens. buy the body only and then buy either a "nifty-50" lens for $100 or spend a little more and get an all-purpose zoom lens like a Tamron 28-70 or sigma 18-50.
used is also a great option.
