Success after IF

Tofu-istas ... I need help!

I like to pan fry it until its crispy but I've always done that in a non-stick pan. Well, in an effort to get rid of chemicals from our lives, I've canned my non-stick pans and have a Le Crueset enamled fry pan but they never get crispy....

What gives? Do I have to have a secret stash of teflon to make my tofu crispy?

  • What kind of fat/how much fat are you putting in the pan with the tofu?    My first thought is that there is too much oil in there and not enough contact between the tofu and the pan.    The catch 22 there is having the tofu stick, of course, but there should be a happy middle ground.
