Please suggest easy meals that can be frozen ahead of time!

Hi Ladies,

I am due with baby #2 October 6 (scheduled c section) and have decided to stock pile my freezer with healthy, easy to make/freeze meals for when the baby comes.

I'd love suggestions (please include links or recipes!!) on what I should make during September for October! So far I have the following:

1) Chicken and veggies soup (with noodles). The soup will be frozen, but I will make the noodles on the day and just plop in. Has anyone frozen soup with noodles before? How does it turn out?

2) Lasagna

3) Quiche- I heard this one is easy to make- does it freeze/thaw well?

4) Curry Puff pastry

5) Ham and pea soup

6) Chicken marinated and then just baked and served with frozen veggies

and that is all I have for now!

Please help suggest stuff that is easy for me to make.

Thanks in advance!

  • You can easily cook and freeze meatballs and breaded chicken breasts.

Another recipe I like is chicken with rice.  Here's the recipe (to the best of my memory):

2 boxes of Uncle Ben's wild rice

    6 chicken breasts

1 can cream of chicken soup (or can use cream of mushroom)

Cook the rice and put into a large baking pan.

Mix the soup with 1 can of milk, pour half onto the rice

Put the chicken breasts on top

    Cover with remaining soup/milk mixture

    Top with parmesan cheese

Bake, I think its 350 for 45 mins

Towards the end, if it is getting too brown, cover with tinfoil

  • Meatloaf is one of my favorite freezer meals.  I make a few at a time, cut them up, and freeze them in sections.  When the day comes and I can't/don't want to make dinner, I take one section out and thaw it.  I then make some easy instant mashed potatoes.  Meal in 10 minutes.
  • Thanks Ladies!! These are awesome ideas :)

    Keep them coming!!

  • Casseroles (similar to quiche) freeze and reheat extremely easily. I can't find the recipe for my favorite one, which is chicken and broccoli w/ egg noodles and tons of cheese (mmm getting hungry just thinking about it!) but here are a bunch that look good! https://allrecipes.com/Search/Recipes.aspx?WithTerm=chicken casserole
