Hi Ladies,
I am due with baby #2 October 6 (scheduled c section) and have decided to stock pile my freezer with healthy, easy to make/freeze meals for when the baby comes.
I'd love suggestions (please include links or recipes!!) on what I should make during September for October! So far I have the following:
1) Chicken and veggies soup (with noodles). The soup will be frozen, but I will make the noodles on the day and just plop in. Has anyone frozen soup with noodles before? How does it turn out?
2) Lasagna
3) Quiche- I heard this one is easy to make- does it freeze/thaw well?
4) Curry Puff pastry
5) Ham and pea soup
6) Chicken marinated and then just baked and served with frozen veggies
and that is all I have for now!
Please help suggest stuff that is easy for me to make.
Thanks in advance!
Re: Please suggest easy meals that can be frozen ahead of time!
Almost anything pasta.
1. Lasagna
2. Baked Ziti
3. Manicotti
You can easily cook and freeze meatballs and breaded chicken breasts.
Another recipe I like is chicken with rice. Here's the recipe (to the best of my memory):
2 boxes of Uncle Ben's wild rice
6 chicken breasts
1 can cream of chicken soup (or can use cream of mushroom)
Cook the rice and put into a large baking pan.
Mix the soup with 1 can of milk, pour half onto the rice
Put the chicken breasts on top
Cover with remaining soup/milk mixture
Top with parmesan cheese
Bake, I think its 350 for 45 mins
Towards the end, if it is getting too brown, cover with tinfoil
Thanks Ladies!! These are awesome ideas
Keep them coming!!
