I"ve been reading a lot about the Uppababy Vista and it seems like it will be a good choice for DH and I (I am 5'11 and DH is 6'4). What do you think? Is the UPV the best choice or is there another, better option for tall parents?
My DH is 6'2" and the Chicco travel system was a great height for him and much cheaper than UPV. Most of their strollers with or without carseat are the same height.

I have the Baby Jogger City Classic (they don't make that one anymore, but I think all Baby Jogger models are similar - so the City Mini or whatever the new jogging one would be fine) and it works great for us - 5'9'' and 6'3''. We both had issues with other strollers, kicking the back and having to hunch over, mostly my husband. A lot of strollers do have adjustable handles. Go to the store and try out a few.
We are 5'5" and 6'5" and love the UPV. My husband test drove a number of strollers, and none came close to the UPV, even the Bugaboo. The UPV has no bar between the back two wheels which makes a huge difference compared to other strollers (plus the great adjustable handle).
I'm 5'10" and DH is 6'2" and we have a Bob Revolution and Maclaren. Both are prefect for our heights, the City Mini we used with my sister's baby was definitely not something we'd want to buy because we had to practically slouch to push it.
We're unusual and didn't use a stroller until we could use a Maclaren (DD was about 4-5 months by that point). DH is 6', and I'm 5'9" - we both like it.

Timely post... we just returned from BBB where we were trying them all out. I'm 5'4" and DH is 6'4" - we both loved the UppaBaby Vista. He kicked the City Mini when trying to push it around the store. I'd definitely try to get somewhere where you and he can both "try them on for size" though. It was also nice to have the opportunity to play around w/ folding them up, adjusting things, etc. All that being said, the Uppababy Vista is what we're going for.
We have a Quinny Zapp that DH has no issues with, and he's 6'3. The newer model (the Zapp Xtra) has a seat that fully reclines and can face toward the parent or away. It can also be used with the Maxi Cosi infant seat. The fold is super small, and the stroller is pretty light.
I use a Phil and Ted often with the baby that I watch, and the handle is adjustable to a very high height. The stroller has great air-filled tires and can turn into a double later on if you need it to. It takes most car seats, and the seat reclines fully. There's also the option of using a bassinet with it.
You could also look into the City Select. I used my friend's once and it's just dreamy.
