1st bday cake recipe, what do you think of this one ? (long)

 I've posted here before that I am Celiac (gluten free - confirmed via biopsy).  My son is very slow to take on true solids.  He also got sick the last 3x he had rice.  Skin test showed no allergy, and he does not get sick from my BM when I eat rice.I found this gluten free/rice free/egg free recipe below.  Anything stand out as being "risky"?  Unfortunately, he has been super slow to try anything, so he mostly eats yogurt and purees and breastmilk.  My thought is to bake this tomorrow morning and let him eat a tiny bit Friday.The party is Saturday.  Usually we introduce one food at a time, and I think his gagging may be texture related.  I don't even think he will actually eat cake!  The reason I say this is he ate oatmeal just fine (gluten free oatmeal), but we took a break from it and he started gagging when we introduced oatmeal/texture again. He had barley flour in some baby food, and he did not get sick from that.
Wheat Free Birthday Cake Recipes - Basic Cake (this recipe is also gluten free and egg free)


4oz (1 cup) sorghum flour
2oz (1/2 cup) potato starch
1oz (1/4 cup) tapioca starch
8oz (1 cup) sugar
1/2 tsp baking soda
1/2 tsp salt
1 tbsp fresh orange juice
5 tbsp oil
1tsp vanilla extract
8 fl oz (1 cup) water


Preheat the oven to 350 deg F (180 deg C).
In a large mixing bowl, combine the flour, potato starch, tapioca starch, sugar, baking soda and salt.
In a separate bowl, combine the orange juice, oil, vanilla extract and water.
Mix the dry ingredients with the wet ingredients, stirring well until the mixture is smooth.
Grease and flour a 9" cake pan, then pour in the mixture.
Bake for around 30 mins, until a sharp knife inserted into the centre comes out clean.

  • it might just be the texture.  Our son wouldn't touch his birthday cupcake and cried when he got icing on his finger.  This year was a little better- but he still hates the icing.
