  • Cheesy Chicken, Rice, and Peas.  (Top 8 Free)

    1lb Chicken

    2 cups cooked white rice

    3/4 cup of peas

    Daiya Cheese

    Fresh Garlic

    Salt

    Pepper

    EVO

    Coconut Creamer

     

    Cook chicken in evo and minced garlic and Shred

    Steam or boil Peas

    Steam or boil rice

    Add everything together.  

    Fold in Daiya cheddar style cheese and add creamer to make sure it spreads.  

    Salt and Pepper to taste.  

    I was surprised by how much I liked the Daiya cheese.

    I wanted to make a new treat for Aiden, something simple but not a cookie or cake so I decided to make Rice Krispy treats. I took the original recipe from the Rice Krispy website and jazzed it up a bit.

    Ingredients

    2 T butter
    3 C marshmallows
    1/2 C Enjoy Life chocolate chips (optional)
    1 C Sunbutter / Almond butter / Peanut butter (all optional)
    6 cups Rice Krispies
    1.5 C of chocolate chips for top layer (optional)

    ~Boil water in a pot and reduce heat to low-medium. Put a metal mixing bowl over pot and melt butter
    ~Add marshmallows, chocolate chips, sunbutter and mix until semi melted (I like to almost completely melt the marshmallows and chocolate chips (but it's much harder to mix)
    ~Add mixture to Rice Krispies and blend together.  (do this quickly while the mixture is still warm
    ~Use a pan of your choice. I sometimes like them thick and use 8x8 pan and sometimes I like them thin and use a 8x12 pan (it's much easier to use a smaller pan).  Add a layer of wax paper on the pan (cover the bottom and sides -let a bunch stick out)

    ~Pour the entire mixture and use your hands to spread everything out

    Optional~

    -Melt 1.5 C of chocolate chips (same method)
    -Either coat the entire top or randomly pour it over top

    Refrigerate for several hours. 

    It's so easy to go crazy with making Rice Krispy treats and i wish i did this sooner b/c this will be our weekly desert. You can add so many fun things to the mixture (depending on the allergy). Some neat ideas...

    >Raisins
    >M&M's (probably not for anyone on this board)
    >Sprinkles

    OMG! i'm so trying this.. i just need to find the right  (soy free) bread for this.

    I've been imagining making french toast without eggs/milk/soy for a while and the only thing i though of is using pureed bananas, but this recipe makes so much sense.. let me know how it tastes.
