Weekly Meal Plan

I'm at my whit's end and need help with meal planning.  Please share (except Michelle, Josie and K&P who always make complicated delicious sounding meals that make me feel like a total schlub).  :)

  • Sunday - bbq chicken on the grill, spinach, oven roasted red potatoes, salad

    Monday - grilled sausage sandwiches w/ peppers and onions, hashbrowns, salad

    Tuesday - eggplant parmesan (frozen from Trader Joe's - super easy), penne with marinara sauce

    Wednesday - leftovers

    Thursday & Friday - on my own, probably cereal or Chick-Fil-A

    Monday - rottisserie chicken (from publix), green beans, mac and cheese

    Tuesday - veggie lasagna and salad

    Wed - orrichette with chicken and broccoli

     Thurs - grilled shrimp and israeli couscous

     Fri - takeout / pizza

    Saturday - roast lamb & potatoes and root veggies

  • haha you should have seen my meal plan last week.  I was the most slack thing ever.  I made 1 real meal and then had quesadillas and takeout all week.  But here's mine for this week

    Sun - eating at book club

    Mon - zucchini, spinach, and goat cheese lasagna, salad and breadsticks

    Tues - baked chicken tenders w/zucchini rice & fruit

    Wed - out before we see The Help

    Thurs - corn ploenta w/tomato-herb sauce, grilled chicken sausages

    Fri - BBQ mushroom burgers, mac & cheese, grilled zucchini

  • I didn't meal plan at all last week and we paid the price.  We ate like crap all week and probably spent 3x more than we usually do.  

    Tonight- strawberry pizzas and salad

    Mon- buffalo chicken wraps with oven roasted broccoli

    tues- chicken parmesan with penne marinara

    Wed- pork carnitas with rice

    Thurs- zucchini burgers with oven fries

    I normally don't meal plan on Fri/Sat because that's when we are out doing family stuff.  If I end up packing a picnic to take along, I make something up on the fly or I go to the store for what I need. 

    I don't think this weeks menu is too over the top.   The pork for Wed is crock pot and I may move that to tuesday since I'm going to a friends house to snuggle her new baby all day.  

  • Veggie Burgers (from frozen) with ranch roasted potatoes and corn

    Crockpot Beef Stroganoff with Salad

    I'm trying a new recipe - Pasta Ponza (https://www.foodnetwork.com/recipes/giada-de-laurentiis/pasta-ponza-recipe/index.html) with grilled chicken.

    Baked Panko Pork Chops with steamed broccoli and rice.

    I *might* make Mexican Potatoes - I bake potatoes (or microwave) and fill them with taco fillings, top with low fat cheese and melt it down.  Add some salsa and sour cream.  Yum.  You can do the same thing with chili, beef stew, or whatever you can think up.

  • Tonight- We had chicken milanese, and orzo with peas, parmesan and garlic butter sauce

    Monday- Kafta kabobs with cucumber sauce, grilled pita and veggie cous cous

    Tuesday-  Gumbo with okra, and turkey sausage 

    Wednesday- Grilled marinated chicken, creamy polenta with spinach and carrots

    Thursday- Turkey monte cristo sandwiches, sweet potato fries

    Friday- whole wheat pizza with homemade marinara, fresh basil and mozzarella

    Sat. probably out to eat

    Sunday- Pulled pork, cheesy scalloped potatoes, green beans with garlic and almonds

    We'll see how well I stick to this menu with me going back to work.  I'm always super tired the first week.

  • Tonight - homemade pizza, salad, and fruit

    monday - grilled chicken and eggplant, couscous, broccoli

    tuesday - spaghetti, salad, bread

    wed - out to dinner (either jason's deli or CFA)

    thurs - grilled salmon, green beans, grilled potatos

    fri - taco night

  • I've actually been in a huge cooking funk lately but I'm trying to do better.   

    I made CI's skillet lasagna tonight and had half for dinner and froze the other half for later.  Except I thought it sucked so I'm not sure what I'll do with the frozen one :/

    And I made a tomato/avocado/mozzarella salad.

    tomorrow:  smothered pork chops, maybe gouda mac-n-cheese, probably asparagus

    tues: either greek chicken w/ roasted potatoes and greek salad or chicken and broccoli casserole

    wed: depends on what time my MIL gets in town.  Hopefully she'll get here early enough and we'll go out to dinner.  If not probably the asian turkey meatballs w/ veggie fried rice and pot stickers.

    I'm leaving Thurs morning for a beach trips w/ my girlfriends.  Cannnnnnnnnnnot wait!!!

    I keep forgetting about carnitas.  I've made them once w/ from an Everyday Food recipe and they were so good w/ salsa verde and avocado.

  • Last night- homemade pizza (bought the premade dough from Publix..really good and saved on much hassle)

    Tonight- baked chicken, zucchini and carrot orzo

    Tues- skillet pork chops, green beans, roasted red potatoes

    Wed- Tacos :)

    Thurs- leftovers

    Friday- Cheese steak sandwiches (I only have 1 steak in the freezer..hope it stretches), baked fries (Publix frozen "restaurant style" fries are soooo good) and Salad

    Sat- Out to eat

    These are exactly the ones I'm making with avocado and salsa verde.  I am making rice with it, but I'll probably add some stuff to the rice, like black beans and spices and what not, because my kids'll eat black beans by the truck load.   I find a way to put black beans in almost everything.  

    Last night Evie would not touch that strawberry pizza.  Strawberry.  Pizza.  (Also, chicken, cheese and bacon, more of her favorite foods.) Would.not.touch.it.   She ended up eating a bowl of black beans, tomatoes and cheese.  Liam had the same thing, except he had onions in his.  Kid loves onions.   

  • Sunday: Ryans (didn't feel like cooking once I finished cleaning after company left)

    Monday: Hamburger Helper Pasta with Tuna (I always keep these on hand for quick meals), brocolli medley, and cut up peaches.

    Tuesday and Wednesday:  Eggplant (currently looking for a recipe with eggplant), salad, and fruit

    Thursday:Brinner

    Friday: Vegetable grilled cheese (grilled cheese with sliced sauteed tomato, sliced mushroom and avocado). Connor loves it.

  • You might want to look into www.thefresh20.com they will plan your meals, give recipes, and a shopping list all for a fee of course. I purchased a plan through my family deals for a steal at $7 and love it.
