I'm at my whit's end and need help with meal planning. Please share (except Michelle, Josie and K&P who always make complicated delicious sounding meals that make me feel like a total schlub).
haha you should have seen my meal plan last week. I was the most slack thing ever. I made 1 real meal and then had quesadillas and takeout all week. But here's mine for this week
Sun - eating at book club
Mon - zucchini, spinach, and goat cheese lasagna, salad and breadsticks
Tues - baked chicken tenders w/zucchini rice & fruit
I didn't meal plan at all last week and we paid the price. We ate like crap all week and probably spent 3x more than we usually do.
Tonight- strawberry pizzas and salad
Mon- buffalo chicken wraps with oven roasted broccoli
tues- chicken parmesan with penne marinara
Wed- pork carnitas with rice
Thurs- zucchini burgers with oven fries
I normally don't meal plan on Fri/Sat because that's when we are out doing family stuff. If I end up packing a picnic to take along, I make something up on the fly or I go to the store for what I need.
I don't think this weeks menu is too over the top. The pork for Wed is crock pot and I may move that to tuesday since I'm going to a friends house to snuggle her new baby all day.
Baked Panko Pork Chops with steamed broccoli and rice.
I *might* make Mexican Potatoes - I bake potatoes (or microwave) and fill them with taco fillings, top with low fat cheese and melt it down. Add some salsa and sour cream. Yum. You can do the same thing with chili, beef stew, or whatever you can think up.

I made CI's skillet lasagna tonight and had half for dinner and froze the other half for later. Except I thought it sucked so I'm not sure what I'll do with the frozen one

wed: depends on what time my MIL gets in town. Hopefully she'll get here early enough and we'll go out to dinner. If not probably the asian turkey meatballs w/ veggie fried rice and pot stickers.

These are exactly the ones I'm making with avocado and salsa verde. I am making rice with it, but I'll probably add some stuff to the rice, like black beans and spices and what not, because my kids'll eat black beans by the truck load. I find a way to put black beans in almost everything.
Last night Evie would not touch that strawberry pizza. Strawberry. Pizza. (Also, chicken, cheese and bacon, more of her favorite foods.) Would.not.touch.it. She ended up eating a bowl of black beans, tomatoes and cheese. Liam had the same thing, except he had onions in his. Kid loves onions.
You might want to look into www.thefresh20.com they will plan your meals, give recipes, and a shopping list all for a fee of course. I purchased a plan through my family deals for a steal at $7 and love it.

We'll see how well I stick to this menu with me going back to work. I'm always super tired the first week.

Tuesday and Wednesday: Eggplant (currently looking for a recipe with eggplant), salad, and fruit
Thursday:Brinner
Friday: Vegetable grilled cheese (grilled cheese with sliced sauteed tomato, sliced mushroom and avocado). Connor loves it.
