chocolate covered Rice Crispy bars

I was going to wait until tomorrows recipe post but i'm too excited (i'll still post it on there).

I made these saturday and i cannot tell you that it is the best desert i have had in a very long time!  

i blended a few different recipes together and made this..

melt 2 T butter (i don't think it's even necessary).
mix in 3/4 C Almond butter / peanut butter / sunflower butter (or nothing)
Mix in 3 C of marshmallows
sprinkle some safe (enjoy life) choc chips (optional but i couldnt resist)

Melt everything and add it to a bowl with 5 to 6 cups of rice krispy cereal

it was hard to mix b/c of the marshmellows but it all mixed in.

I used an 9x9 pan and put wax paper (sticking out of each side, not just layered on bottom.. it pretty much covered all 4 corners).. and put the mixture in and used a fork to mold everything down into each corner. (took some muscles).

Melted 2 cups of chocolate chips (you can do 1 cup or 3 :).. and poured it on top of the mixture and spread it out evenly. 

Refrigerated it for a few hours and then took the wax paper out and cut it into little squares. My son / DH / Friends all LOOOVED IT! it was sooo good. I'm eating a piece now and i can't believe how yummy it is.

  • yay!  I keep meaning to make these and haven't had time.  I"m so glad they turned out well.  Whole Foods has top 8 free marshmellows and I have the GF rice crispies.  I can't wait to try this....

    what do marshmellows have that's in the top 8?  I was worried to give this to my son but didn't see anything milk/soy/eggs in them.. 

    Either way, i'm going to get the ones from whole foods also, i'd rather make it top 8 free.

  • some have egg based meringue.  (I learned that after I made a giant batch of krispie treats and my mom told me to check the bag....)  I just bought the ones marked as safe so that I didn't have to call the company/worry about cross contaimination etc.  At our WF they were in the baking aisle and are marked as "kosher safe".

  • Funny - I just made these yesterday on a whim and threw in 1/2 cup sunflower seed butter to see how the kids would like it - and then I see this post today!  :)  The addition of the sunbutter did something to the consistency of the melted marshmallow - suddenly the whole mixture was very "puffy" and didn't stir at ALL.   I had to use my hands to mix it together.  Oh, and I froze the chocolate chips first - that way when I added them to the warm mixture they didn't melt.  It just makes for a "prettier" finished product, as I skipped the frosting.

    Despite the texture difference, the kids LOVED this combo (with GF Rice Krispies).

    didn't know that. I checked the ingredients and didn't see any eggs (eggs is a pretty bad one for DS). I don't mind eating the rest of them and making him new ones with marshmellows that are safe :) ha

    LOL! i'm thinking of making them next time with sunbutter. Even though my son can have almonds, i want to somehow incorporate sunbutter into our diets. 

    It was ridiculously hard to mix and my arms hurt a bit after but totally worth it.
