Last week I made this Mexican Breakfast Casserole https://crockpot365.blogspot.com/2009/03/crockpot-mexican-breakfast-casserole.html
A few changes I made...instead of the green chiles, I used 1 can of Rotel, I used canned corn - didn't have any frozen, and with a sick baby I wasn't going to tote him to the store for frozen. I also didn't use mushrooms.
It was tasty, I should have used way more than 8eggs though. I have a 5qt crock-pot, so it was more tortilla tasting than egg tasting. I will also add some ground up sausage to it next time.
It will be made again in my house :-)

I love great crockpot recipes. Thanks for the tips on tweaking your recipe to make it better. I always make a dish according to the recipe, and then make notes on what I would do different the next time.
I tried this dish a few weeks ago. https://hugosrestaurant.com/files/HowToCook-PastaMama.pdf I added chicken, and it was good in a "comfort food" sort of way, but sort of bland. I will definitely make it again, because it's easy, and will kick it up a notch with maybe some seasoned ground beef or sausage and some veggies.
Note that this is a great way to use up leftover noodles!

This is what DH and I are having for dinner tonight - we've had it before and it was delicious! I'm trying to use recipes from Cooking Light since DH and I are both trying to watch our weight. Well, okay, I'M trying to LOSE weight, DH is just fine.
A good tip for us is that we make a double batch and eat the leftovers all week. Sam's has a bag of frozen shrimp that works perfectly for this. (I realize that eating the same thing all week isn't for everyone, but we usually have at least one other event with dinner during the week, and the ease of leftovers is perfect for us).

I cook the pork in the crockpot (10ish hours on low) after marinating it in the dry rub overnight. If boston butts are on sale at the grocery store, I'll buy a couple, put the dry rub on, put in a freezer bag, and freeze for later.
