Green chile chicken casserole. The recipe changes a little every time I make it, but here are the basic ingredients:
Diced cooked chicken breasts
sauteed onions, garlic, bell peppers, and sometimes zucchini
thawed and drained frozen chopped spinach (sometimes)
cream of mushroom or cream of chicken soup (or a combo)
chicken broth
mexican blend cheese
corn tortillas (crushed tortilla chips are good, too)
Mix everything together, except enough cheese for the top and tortillas. Layer the mixture and tortillas. Then top with tortillas cut into strips and cheese. Bake until hot and bubbly.
I added lots of veggies this time and used a low fat version of the cream of chicken soup because DH and I are on Weight Watchers. I hate low fat cheese, so I just used a little less than usual.
I made s'more brownies in cupcake tins for our church bake sale, and DH and I ate some of them for dinner. They were yummie and suprisingly low in WW points- not super low, but not as high as I thought they'd be. We were both able to enjoy some without feeling guilty about it. They were easy. I mixed graham cracker crumbs with melted butter and a little sugar to make the crusts, baked a few minutes to set. I topped with prepared brownie mix and baked for about 15 minutes, added 8 mini marshmallows to each one, and baked until the marshmallows were browned.

Thanks! I just realized that I forgot to add the most important ingredient- green chiles! I use two 7 oz cans of diced green chiles. Sometimes I use green salsa, but I didn't want it to be too spicy for LO.
