I'll just list my go-to meals, but I would be more than happy to share the recipe/find the link if you are interested.
I use my crock pot a lot:
french dip sandwiches
savory pulled pork
BBQ pulled pork
chicken & potatoes
sausage bean soup
shredded beef for tacos
shredded chicken for tacos
pot roast
Tex Mex chicken (can serve over rice, we put in tortillas)
Santa Fe chicken
Ham and lentil soup
Some of my other meals include:
Italian stew (peppers, onions, Italian sausage, elbow macaroni)
rosemary dijon pork chops
unstuffed peppers
tacos (I make my own seasoning)
spaghetti (I make a big pot of marinara and freeze in small batches)
meatloaf (can make ahead of time and cook when ready....although it does have to bake awhile)
That's all I can think of off the top of my head but I feel like I'm forgetting some. I'll post more if I think of them. Let me know if you want any recipes.

My Nana's Pot Roast
about 6 slices real bacon
lean cut of beef...whatever size works for your family
diced carrots, sliced onions, water
Cook the bacon. Remove from pan but leave the drippings. Crumble when cool. Sear the meat in the bacon fat on all sides. Lightly brown the onions and carrots in the remaining fat. Put the veggies in the bottom of the crock pot, layer the meat on top, then the crumbled bacon. Add enough water until it's all covered. I cook on low all day (8-10 hrs) and then serve with mashed potatoes.
Good-n-Easy Stew
3 pounds lean stewing beef, cut into cubes
1 can cream of mushroom or cream of celery
4 oz can sliced mushrooms, drained
1/2 cup sauterne wine or beef broth
1 envelope dry onion soup mix
Combine all ingredients in the crock pot. Cover and cook on low 10-12 hours. If desired, thicken gravy with flour. I usually serve over egg noodles.

Shredded Savory Pork
3 pound boneless pork shoulder blade roast
8 cloves garlic, minced
2 tsp ground coriander
2 tsp ground cumin
2 tsp dried oregano, crushed
1 tsp onion powder
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp ground red pepper
1 cup beef broth
Trim fat from meat. Combine garlic and all spices. Rub into meat. Place meat in crock pot, add beef broth. Cover and cook on low 8-10 hrs or on high 4-5 hrs. Remove meat from liquid and shred with 2 forks. Stir in enough liquid to moisten. Serve on toasted buns.
Sausage Bean Soup
1 pound bulk Italian sausage cut into pieces
1/2 cup chopped onion
2 cloves garlic, minced
16oz can whole tomatoes, undrained, cut up (I actually use a can of crushed tomatoes)
1 can black beans undrained
1 can butter beans undrained
1 can beef broth
1 tsp dried basil leaves
grated Parmesan cheese for garnish
Brown sausage, onion, and garlic in a skillet. Drain fat. Transfer to crock pot. Stir in remaining ingredients except cheese. Cover and cook on low 6-8 hours or high 3-4 hours. Ladle into bowls and top with cheese.

French Dip
1 can beer
2 cans beef broth
2 cans French onion soup
2-3# beef roast
Combine all in crock pot. Cook on low 8+ hrs until meat shreds easily. Place on hoagy rolls and serve with au jus for dipping.
Tacos
1 tbsp. chili powder
1 tsp each: paprika, cumin, sugar, garlic powder, onion powder, oregano, corn starch
? tsp salt
Brown meat. Drain. Add mix and ? cup water. Heat through.
Crock Pot Chicken and Potatoes
4 boneless chicken breasts
? cup Italian salad dressing
1 tsp Italian seasoning
? cup grated parmesan cheese
4-6 medium potatoes cut into wedges
Place chicken on bottom of crock pot. Sprinkle with half seasoning, half dressing, half cheese. Put potatoes on top and sprinkle with remaining dressing, seasoning, and cheese. Cook on low 6-8 hrs.

Rosemary dijon pork chops I often make this without the potatoes
Unstuffed peppers I usually use ground turkey
I use Giada's marinara sauce and usually double the recipe so I have lots to freeze.
