anyone have a good recipe for stuffed zucchini?

A friend is leaving on vacation tomorrow and just brought over 8 zucchini (among other things) from her garden. Score! I'm really excited about the zucchini because I've been wanting to try stuffed zucchini but I've never made it before. I googled but there seems to be lots of different ways people make it and I'm not sure which way to go. If you have made it before, please share your recipe! TIA.

This looks great. I have been wondering what to do with all of these zucchinis. There is only so much zucchini bread we can eat or give away.

LOL! Right?! We are making zucchini lasagna tonight...next week we might try the stuffed recipe.
