NRB: Anyone have any good sugar-free recipes?

I promised a co-worker I would making him something sweet for saving me boxes for my upcoming move. He's diabetic, so no sugar. I've never made anyting sugar-free before, anyone have any good recipes?

  • I make this pie for my diabetic father in law and he loves it. I use a graham cracker crust (okay, that does have sugar in it, but it's not a huge part of the dessert. For the filling I mix two small boxes of sugar free jello pudding, one small container of sugar free cool whip, and about 3/4 cup of cream cheese. Mix it with a mixer until smooth (you can add more cream cheese or another package of pudding to get it to your desired consistency if you want) and pour it in the pie crust. Top with berries that have been sprinkled with splenda.

    Whoops! Forgot- mix the two pudding packages with two cups of skim milk :)

    I got this recipe from someone in a Weight Watchers meeting a few years ago, and it's great. I've made it for lots of different events, and everyone loves it. You can make it with whatever flavor jello and yogurt you prefer. Peach, strawberry, raspberry, lime, and orange are all good (or orange jello with vanilla yogurt)

    Dissolve1 pkg sf jello in 1/2 c boiling water by wisking. Wisk in 2- 6 oz containers light yogurt. Fold in 1 8-oz container of light cool whip- use sf, since he's diabetic. Pour this into two graham cracker crusts and refrgerate unti; set.
