  • This week was crazy, so I didn't make it too complicated.  The recipe I'm posting wasn't the most complicated or the best of the week...HOWEVER is was Asher's favorite! 

    Turkey Quinoa Helper (Top 8 Free)

    1 lb of ground turkey

    1 box of Quinoa Elbow Noodles

    EVO

    Garlic

    2 Zuccini

    1 small red onion

    salt and pepper

     

    Prepare ground turkey by adding minced garlic and chopped onions.  Add salt and pepper as desire.  Place in fridge for a few hours.  

    Sautee ground turkey until done.  

    Boil noodles until achieved consistency  

    Chop zuccini into non chokeable pieces.  Sautee with onions, fresh minced garlic and evo.  

    Mix everything together (Add some more evo if you want a more slippery noodle)

  • First of all.. this rocks! i made bbq chicken in the crockpot (from last week's recipe exchange) and my DH LooooOOOVED it!  So bring on the recipes ladies.

    here is one i posted on my blog last week.  I might have posted this a while back on here also. 

    Quick and easy and the batter can stay in the fridge for a few days. Milk, Soy, Eggs, Nuts free.

    CRAPES
    2 Ener-g Egg replacers
    1 Cup of Flour
    1 1/2 Cup of milk (I use Oats)
    1 Tbsp Oil

    Beat together and make like pancakes but much thinner.  I usually mess up my first crape and after the first one it goes smoothly.

    Pour a small amount of mixture on the pan and spread it around by shifting the pan from side to side. It should be as even as possible.

    Flip it.  You should know when to flip it if you can shift the crape by moving the pan. 

    Smear some jelly on one side and Almond butter / Peanut Butter / Sunbutter on the other side (or just jelly).  Works well with apple sauce also. 

    Roll and enjoy

    **you can add some brown sugar into the mixture for sweetness.

    This is from preventionrd.com. It's the only meat I've been able to get Shane to eat. The original recipe called  for BBQ sauce in the glaze but I left that out. 

    Gluten-Free Cheesy Meatloaf Balls slightly adapted from Healthy Heddleston

    Ingredients for balls:
    1 lb ground turkey
    1 cup crushed gluten free crispy rice cereal
    1/2 cup Parmesan cheese, shredded
    1 egg (I used a 1T of canola oil instead)
    1/4 cup ketchup
    1 cup 2% shredded mozzarella cheese
    1 tsp garlic salt
    1 tsp fresh parsley, chopped
    2 tsp dried onion
    dash of pepper

    Ingredients for glaze:

     1/2 cup ketchup
    1/4 cup brown sugar
    Directions:

    Preheat oven to 375? F.

    Combine all of the ingredients for balls. Roll mixtures into mini meatloaf balls (about 15).Combine all ingredients for the glaze. Gentle apply glaze to each meatloaf ball with a pasty brush. Bake for approximately 30 minutes or until cooked thoroughly. Yield: 15 meatloaf balls with glaze (about 5 servings; 3 meatloaf balls each).

    I'm making this with Daiya and some other substitutions.  I'll let you guys know how it goes.

  • I just want to say thank you for this check-in. i know I've only posted in it once, but I find it SO helpful.

    I need to start writing down what we cook/make. We don't really follow recipes, and if we find something we like with an allergen in it, we've become pretty proficient at finding something to substitute for it. I feel bad not having anything to share most weeks, but I want you to know this post is appreciated!!
