I think its fair to say at this point that the check in has moved to Tuesdays.  So lets hear the yummy foods you have prepared this week sans ALL or Any top 8 Allergens!

    milk/soy/egg/nut free

    I made waffles this past weekend and my son LOOOVED them (so did my DH).  I even froze a batch and last night toasted one of them and they tasted like it was just made fresh.

    great snack and easy to make.
     

    ORIGINAL RECIPE. 

    Chocolate Pancakes and Waffles

    2 cups flour
    3 tbsp sugar
    2 tbsp cocoa powder
    4 tsp baking powder
    1/2 tsp salt
    2 1/4 cup water (I used rice milk)
    3 tbsp oil

    Combine the flour, sugar, cocoa, baking powder and salt. Add the water and oil and mix until thoroughly combined.

    For the waffles, pour 1 cup of batter onto the preheated waffle iron that has been sprayed with nonstick cooking spray before each waffle. Cook for 3 minutes or until golden and cooked through.

    For the pancakes, pour the batter onto a hot skillet or griddle that has been sprayed with nonstick cooking spray before each addition. Cook until bubbly, turn and cook the other side until golden.

  • This week I stayed with simple recipes.  Last night I made a BBQ Chicken. 

    Top 8 Free  

     

    1 lb of chicken breast

    1 container of Gluten Free/Soy Free BBQ Sauce

    1 Cup Chopped Pineapple

    1 Red Onion chopped

    Corn on the Cobb

    2 Cups of White Rice

    EVO

     

    Marinate Chicken over night in BBQ Sauce

    Place in pyrex and bake at 350* for 45 minutes 

    Boil Corn until tender

    Prepare rice as directed.  

    Add  EVO, Pineapple, and onions to pan and sautee.  (save juice) 

    Add Juice to rice and mix in a bowl.  Add pineapple and onions.  

     

    It was actually very yummy.

    mmmm I wonder how these would come out of I used rice flour!

  • your recipe just reminded me of yesterdays dinner (i don't eat chicken but it was for my DH).

    Place in crockpot (i do LOW for 6hrs or frozen is 8hrs)

    4 pcs of chicken
    1 large jar or salsa (i use the regular potato chip salsa).
    water to cover what ever chicken is left

    That is it!  my DH puts it on a wrap with cheese, tomatoes, onions.

    I thought about doing it in the crock pot, but I didn't get it in the crock pot in time to do a slow cook.  But I bet the chicken would have been much better cooked slowly.  

    You can also do a pulled chicken using this bbq sauce.....add the pineapple and onions to the chicken...mmmmm and then corn on the side..  I think I'll make that this week.

  • We're doing crockpot BBQ pork steaks tonight with home grown corn on the cob and last night I made a roast in the crockpot (pork roast w/ potatoes, carrots, celery and fresh herbs + a little water and cook).  It's too hot here to have the oven on.

    This is the opposite of a recipe- I did find out this week that Chipotle mexican restaurants are super allergy friendly.  The website has a comprehensive list of the top8 and what is/isn't safe on the menu by allergen.  One of my friends from college is a marketing rep for them so I called him to discuss and he said every single manager is trained on allergy safety.  If you have FA and go into one of their restaurants- just ask the first person on the line to change their gloves because you have a FA and they'll be happy to.  All of the employees get trained on cross contamination etc.  So- if you don't feel like cooking- there's  a safe restaurant :)  I'm so excited about actually going out as a family.

    I tried to sneak some veggies in by making zucchini fries. I had seen a recipe for them that was dipped in egg and bread crumbs but I wanted to try to make an allergy friendly version.  I don't have exact measurements b/c I put this together in a rush.

    Zucchini (and I used carrots too) cut into the size of fries

    Crushed up rice chex seasoned with garlic salt and italian seasoning to taste

    olive oil or plain yogurt (depending on your allergy)

    Directions:

    coat the cut up veggies with olive oil or yogurt and dip in the chex mixture. Bake in the oven at 350 until veggies are tender.

    Notes: The chex stuck much better with the yogurt than the olive oil, but I wanted to try both ways to see how it worked, I was still able to get a light coating with the olive oil fries but it wasn't enough to hide the veggies.

    Shane wouldn't eat these at all (he's more of a fruit guy, but I keep trying w/ veggies), but I thought they were pretty good. I might try again to see if I can get them better coated without using yogurt.

    I have been trying to come up with a way to bread things forever now!  Thank you for posting this.  I have rice chex at home as we speak and I think I'm going to try this tonight!
