Speaking of OOT spouses, I know there have been a number of discussions of how to simplify life when your spouse is OOT. My DH usually travels once every 6 weeks or so. Before he leaves, I always make sure to make a batch of freezer meals for DD#1 so that I don't have to worry about cooking a meal when I get home from work. I can just pop one of these in the microwave for her dinner. For myself, I usually eat a frozen meal or salad that I buy from work. I happened to have my camera out the last time I made the freezer meals so I took a few photos so I could share them.
I make 2 cups of Giant brand instant brown rice. After it's cooked, I stir in some butter. Once the butter is melted into the rice, I stir in frozen peas, carrots and corn. Then I divide the mix into 8-10 tupperwear containers.
While the rice is cooking, I microwave some Trader Joe's turkey meatballs and cut them up. I put the meat on top of the rice mixture and then stack them up and freeze them.
You can do any variation of this by swapping whole wheat pasta for the rice or choosing different veggies and/or meat. Doing this has been a huge stress reliever for me and I always make sure to have a batch of these frozen meals in the freezer. I give them to DD when DH is OOT. It's also useful if I cook a spicy meal that DD can't eat so I can feed her one of these meals instead. We also use these when we go to someone else's house for dinner so that I can easily bring a meal for her.

But, luckily, she'll eat yogurt and bananas.
Yea, DD loves the TJ's turkey meatballs. I think she likes them because they are so easy to chew. I can't get her to eat much chicken because I think it's harder for her to chew and she usually ends up spitting it out. So, this has been a good way for her to get some protein.
