What is your favorite egg replacement trick?
I bought some Ener-G egg replacer and made waffles with it. They were great. I tried making DS' birthday cake with it and it's really heavy. I haven't tasted it yet but it seems so dense. I know there will be rising issues without actual egg but I didn't know if one method seemed to replicate a real egg better than another.

it really depends on what i'm making.
pancakes - Ener-G egg replacer
baking - I try finding things that don't require eggs, but if they do, i substitute with apple sauce and some coconut yogurt. (the coconut yogurt makes it more moist, but does weigh down the recipe -so it's much better with cookies than cakes).
I do believe that there are some recipes that will not work without eggs. So i avoid many recipes.
Also, if the recipe requires more 2 eggs i avoid, b/c usually there is no replacer for that. I actually just try to stick to one egg recipes b/c than the egg can be easily replaced
