I'm always in charge of meals when we go with Joey's family. Will you have access to a grill? I always take advantage of waht's fresh and local - like when we go to the gulf we have lots of shrimp and grouper. Here are some of the things I've done in the past:
baked ziti or lasagne, garlic bread, salad
grilled bbq chicken, corn, and a veggie
burgers, hot dogs, oven fries, fresh fruit
fish/shrimp/grilled chicken tacos, black beans and rice, chips, salsa, & guacamole
grilled fish or steaks w/twice baked potatoes and asparagus
bbq, mac & cheese, tomato salad
low country boil (shrimp, corn, potatoes, kielbasa), biscuits, salad
make you own pizza night
shrimp scampi, salad, garlic bread
grilled chicken salads, corn on the cob, bread
For snacks, I'll usually buy a watermelon or canatloupe and cut it up the first day, so we can have it just to grab and go. I also make a big thing of salsa to take with us, and we'll pick up some fun cheeses and one afternoon do a cheese platter with crackers and fruit. We are about to go to the beach with some friends from college, and we're each in charge of dinner one night. I think for our night I'm going to make pimiento cheese dip for the appetizer. I'll probably make it before we head down and then just pull it out for everyone to snack on while we make dinner.
