This week I made a Top 8 Free Creamy Garlic and Veggie and Turkey Pasta.
Ingredients:
2 boxes of tri colored Quinoa Pasta Spirals.
1 Cup of Coconut Creamer
4 cloves of garlic
1/2 red onion
1 zuccini
1 summer squash
Salt
Pepper
1/2 cup of rice flour
Sauce
combine Creamer, garlic, salt, pepper, and rice flour in a sautee pan over medium heat, wisk in some evo.
Boil Pasta to Tenderness.
Cube up turkey breasts and sautee over medium heat with some evo
Sautee veggies/onion
Add everything together and toss.
Yumm. Simple and east!
This was a "what needs to be used" recipe and it was a big hit. Going to be a staple in our house. We are only dairy free, so I am not sure what of the 8 this includes...
2 chicken breasts, baked from frozen and cubed
A stick of celery, a couple peppers (I had red, yellow and orange on hand) mushrooms, all chopped
(the above I had pre-prepped and frozen...)
Heat oil in a large pan, toss in some fresh minced garlic. Add frozen veggies & meat. Add any additional veggies - (I put in a pepper I needed to use, some cherry tomatoes chopped, some corn)
Add half a teaspoon cumin, and 1/2tsp chili powder, dash of any other seasoning you want.
When stir fry is cooked, add 1/2 cup water and 1pkg egg noodles. Cover and stir occasionally until noodles are soft.

I am never going to be published in a recipe book, I totally cook "dash of this, pinch of that" and throw in random stuff all over the place. I would adjust quantities based on how many people and how many veggies I had on hand. I think the key things that made this though were the tomatoes and the chili powder. There weren't any leftovers for the next day's lunch...
Applesauce Cookies
3/4 cup light brown sugar
3/4 cup vegetable oil
1 cup applesauce
1/2 tsp salt
1 tsp vanilla extract
1 cup oat bran
2 cups soy flour
Combine brown sugar and oil until smooth. Add all other ingredients one by one, stirring to make sure each is mixed completely. Form dough into equal sized balls and place 2 inches apart on a greased cookie sheet, and flatten the top with a fork. Bake at 350 degrees for 15 to 17 minutes, or until cookies are golden brown and crisp. Enjoy!! These cookies are totally wheat free and dairy free.

I made sweet potato fries last night but only DH and i ate it.. DS spit it out. darn.
Sweet Potato Fries
sweet potato
cut in thin slices
soaked in olive oil
Pepper / Paprika / Cinnamon
Bake for 20 mins on one side and 20 mins on the other (longer if you want it crispy)
Yeah, not too original. I think i need a vacation and just focus on recipes.

Asher has been beastly when it comes to food lately. A kid with his allergies just shouldn't be so picky. Ugh. Hes also getting really angry lately if he can't eat what other people are eating. It makes me sad. I've been trying really hard to make meals that taste good and he can eat and its not always an effort that is rewarded.
Not super fancy but.....
chicken breast
mango/peach salsa
corn (check brand to ensure no allergies...I get the one from costco)
black beans
brown rice
Cook the chicken, salsa, corn, and black beans in a pan until cooked through. Prepare brown rice...servce over rice....really yummy....you can add sour cream or cheese (fake or regular based on your allergy).
You can cook it in the crockpot too on low for 6-8 hrs (chicken can be frozen,).
DS loved it!
I have a DELICIOUS recipe for Top-8 free potato corn chowder, but it's from a cookbook and I don't feel comfy posting the recipe on the internet (I Googled and it's not available). So if you're interested, PM me!
DH and DD love it just as much as I do! (And that's saying something, as they're allergy-free.)
Pumpkin Spice Muffins
1 box of Spice Cake mix (can't remember if it was Betty Crocker or Duncan Hines) ONLY CONTAINS WHEAT
1 Can (15oz) of 100% Pure Pumpkin
Mix (note, initally you will think that this will NEVER come together, but, it does), it will be super dense
Spoon mixture into muffin tins (3/4 way full)
Bakes at Temp according to box for 15-18 minutes (check with tooth pick)
** you can turn into a cup cake by using a poweder sugar and apple juice glaze on top**
