Food Allergy

lunch/dinner ideas?

I'm starting to get into a runt with my dinner ideas and he's getting to be picky again (wth?)

He no longer wants pasta every day, no longer wants oatmeal, no veggies, never wants beans, not a fan of meat (sometimes) and rarely is eating almond butter now.

For the past week it's been pasta for lunch and chicken nuggets / avocado / fries for dinner.

I plan on making sweet potato fries tonight but last time he didn't like them.

I'm also going food shopping today so i want to make a list.  what has been working for you lately?

I hope it's a phrase and he's just not hungry instead of bored.

    I've been making my own bread lately.

    Grilled cheese (daiya) and soup (granted I don't have a toddler so I don't know if soup is even practical)

    nachos (without beans)

    quesadillas (add in some yummy healthy veggies, like spinach)

    fruit kebbabs (for presentaion)

    mashed potatoes or cauliflower

    carrot cake muffins

    hummus

    thanks! i tried hummus this passed weekend and he thought it was poison. I might try making it myself with less garlic.. I think hummus can be too strong for kids b/c of all the garlic.

    he hates mash.. i have tried about 30 times. but haven't tried cauliflower in a long time

    I'll look for a carrot cake muffin.. maybe i'll add some zucchini and carrots  :)

     

    I think my main complaint is that i'm getting tired of cooking so much after work. being pregnant and having a clingy toddler and having to have to cook before my son starts freaking out (5:30pm) is tough. And then cooking for myself and DH which is always two different things. This is the first week i haven't cooked sunday/monday and im not cooking for him/me tonight either. I"m too tired.

  • I can't remember what his allergies are but have you tried a muffin tin meal?  It's a great way to get a good variety of foods in and it helps me get over feeling like things have to "go together".  We do this for lunches for my kids several times a week and it also helps me get rid of bits of food left over here and there, veggies, fruit, etc.  My children have very different nutritional needs so this is an easy, fast way to fix them a meal that meets those needs and they don't have to be the same (and solves their fighting for each others foods).  Here is a blog post I did about it:

    As for cooking so much, I do double batches every single time I cook something.  To add to that, if I'm cutting one onion for something, I cut two and stick it in the fridge, that way some prep is done for another meal and it only took another second since everything was already out.  It's the prep that takes so much time for me so I really cut down on that when I can.  I also try to put double batches of things in the crockpot on Sunday for us to eat on during the week.  I feel like I always have to stay one step ahead with a hungry teenager in the house....sigh.

    I try to make extra every time i make food but my DH or nanny usually eats it ;  i guess i need to make a lot extra. (i did recently started putting a sign on the container "only for Aiden" --otherwise my nanny starts picking at it ;

     

     

  • Have you tried the chicken sausage at trader joes?  It's in the meat section- but they're heat and serve.  Not all of the varities are safe (some have cheese) but I just checked our sun-dried tomato ones and they're safe for your guy (no soy).  It's our go-to quick lunch or dinner.  J gobbles them up plain- I like to add them to a salad.

     Also I've started to make safe pancakes in giant batches on the weekend and then freezing them.  That way we can have breakfast for dinner one night a week. 

     You could also do big batches of breaded (use GF breadcrumbs) eggplant slices so that you can throw together eggplant parm (use diya cheese). 

    Can you guys do sunbutter?  J will eat that on a rice cake for a snack or lunch if I'm pressed for time.  I've also started to buy more veggies frozen than fresh so there's less prep work involved. 

    I try to put my extra food in the deep freezer pretty quickly- otherwise my DH does what yours does and eats it all.  I've menu planned for a while- but now I hang our weekly menu on the front of the frige- he knows not to eat the ingredients for things on the list for later that week :)

    I'm back to work in about a week and a half and just the idea of cooking every night is exhausting.  Good luck!
