My oven is broken. DH is going to fix it but needs a part. Hopefully he can get the part Monday and fix it then. But I think my house is cursed and as soon as I plan on having my oven up and running Tuesday it will still be broken. So.... I figured now was the time to try some new stove top meals. So anyone have any they'd like to share???
Re: meals you don't need an oven for
I'm making this tonight. I either reduce the recipe or make all 3 lb and freeze it.
ETA: I only use 1/2 the chili powder if I'm giving some to DD, it's a bit spicy if you use the full amount.
You could always grill meat, make rice and steam some veggies?
There's always pasta with a sauce. We sometimes make garlic bread in the toaster with a small bit of butter and garlic powder.
One of my favorites is bowtie pesto pasta. Cook the bowties, make the pesto sauce on the stovetop, and mix together when done with a little italian cheese and ground pepper. I'll often just cook some chicken chunks in the microwave and add them when I'm done too.
If it helps, my parents' oven broke when I was a kid. They couldn't afford a new oven, so they wound up buying a toaster oven and borrowing an electric skillet from friends of ours. (kind of like this: https://www.kohls.com/upgrade/webstore/product_page.jsp?PRODUCT%3C%3Eprd_id=845524786743035&pfx=pfx_shopcompare&cid=shopping10&mr:referralID=82529876-ab22-11e0-be22-001b2166becc). They were able to cook all sorts of meals in there.
They were able to feed all 4 of us kids and them for several months using those and the stove top. While not ideal, it was all they could do at that time. They saved up enough to buy a microwave probably 6 mos later and then got a new oven probably 6 mos after that.
I have recommended these tostadas here before, but they are delicious.
This chicken stir-fry recipe is not traditional, but we like it. It's my sisters and was pretty much the only way she could get my oldest nephew to eat vegetables as a toddler. Plus it's easy.
Sam's Chicken Stir-Fry
2 T vegetable oil (I use a nonstick skillet and use less to no oil)
1 lb. boneless, skinless chicken breasts, cut into think strips
1 bag frozen stir-fry vegetables
1 can tomato soup
1/2 t ground ginger
2 T soy sauce
1/4 t garlic powder
2 T apple cider vinegar
In skillet, stir-fry chicken strips in oil with ginger and garlic powder until chicken is done. Add vegetables, soup, soy sauce and vinegar. Stir. Heat to boiling. Reduce heat and let simmer for 20-30 min or until vegetables are right crispness for you. Serve over rice.
I also have a yummy marinade for kabobs if you want to break out the grill, or a beef stroganoff recipe that uses ground beef.

So your stove top works?
How about any pasta recipe - with meat sauce, shrimp scampi, primavera... I don't have recipes for any of these.
Meat sauce is a just a pound of ground beef, some onion and garlic, and either a can of store bought sauce or one can diced tomatoes, one can tomato sauce, and dried parsley, oregano, and basil, plus salt and pepper. Sometimes some fennel.
Shrimp scampi is onion and garlic sauteed in butter with salt and pepper, add splash of white wine or chicken stock, throw in a pound of thawed raw shrimp and cover, cook 3 minutes, add juice of 1 lemon. Add some of the pasta cooking water and toss with cooked pasta. If you have fresh parsley, chop some up and throw it in.
Primavera - sautee whatever veggies you have in the fridge - onion, garlic, cherry tomatoes, summer squash or zucchini, mushrooms, etc, in olive oil with salt and pepper. Add a little chicken stock if you want. Add a little pasta cooking water and toss with pasta.
Beef stroganoff is a favorite in my house and I love this recipe from Cooking Light. https://www.myrecipes.com/recipe/beef-stroganoff-10000001599646/
Yup....the control for the oven/broiler is digital and the electronic board died. Fun!
Thanks for the ideas! I'm out of marinara in my freezer, so this will be a good week to make a new batch. And that shrimp scampi sounds good too.
