Well hello all!!!
I am wondering what you guys are doing for nutrition during your pregnancy.
I have been wanting to get on a more conscious diet and here is what I have so far:
Gluten free Hummus with veggie dippers( good protien nutirents, fiber and veggies)
Cheese pieces and gluten free crackers or apple slices
yogurt berry smoothie( I also sneak my liquid vitamin supplement into this)
Gluten free oatmeal with milk and a little honey for sweetness
cottage cheese and sliced fruit
almond butter( I am also allergic to peanuts) and apple slices or gluten free bread
Quinoa with seared salmon.
Any other ideas would be great, Especially for quick on the go meals!
Re: Nutritious meals for a celiac during pregnancy
I'm not a celiac, but I don't eat grains (and didn't for my last pregnancy).
Eggs were a staple in my diet. I had them every morning for breakfast, often with veggies mixed in. You can make egg cupcakes ahead of time and freeze. Hard boiled eggs too!
For snacks I ate mostly nuts and dried fruit. Lara bars were great to have stashed places.
I also ate a lot of salads and crudite that I fixed ahead of time.
I also would double recipes and freeze half so I would have a dinner ready to go on the nights I was too tired to cook. Recipes that I often did this with: meatloaf, meatballs, moussaka, pizza/marinara sauce, taco meat, chili. Add a salad and you are done.
For desert, all I wanted was grape or coconut popsicles.
Here are two of my favorite sites with recipes:
elana's pantry
everyday paleo
I am anxious to hear responses. I am also diary-intolerant and just got hit with nausea really bad! All I want is Ritz crackers with sliced cheese and I can't have either
( wahhhhhh
I just ate almost an entire package of sesame rice crackers... maybe its time to go to the store!
I don't eat any different between pregnant and nonpregnant. I eat alot of whole grain quinoa, oatmeal, millet and corn. I load up on greek yogurt and fruit. I live off of Udi's bread products, so I eat hamburgers, hotdogs, sandwiches, etc - you name it. All extremely healthy. I also eat more nuts now than I did before - partly because Costco almonds rock....
Glutino makes a table cracker that is awesome - so I eat those with cheese or some sort of spread (costco makes an awesome greek yogurt w/ chive and onion).
I also load up on gluten free pizza crusts from Namaste - stick them in my freezer and throw them on the grill once a week - you name it for toppings - veggies, meats, etc. YUM.
