So, DH and I are trying to put together a resort vacation w/ the LO for late summer/early fall...so LO will be about 21 months old. It will just be the 2 of us and LO, so we've been looking into places that have some day care/nanny options. Any good recommendations for places to go? We are thinking Fla or Caribbean/Mexico areas.

The main thing that I would look into is a condo over a regular hotel room. I know a lot of the AI resorts in the caribbean are just hotel rooms. Even last summer when DS was only 7 months old we had to get a 2 bedroom condo so he would have his own room.
We went to Club Med in Florida for Memorial Day and our son was 20 months at the time. We absolutely loved it - they completely cater to kids. It's an all-inclusive, and the food was wonderful. It was so easy to have the buffet - if my son didn't like the first thing I tried, I'd just go back and find something else. They even have the big Graco highchairs with trays. They also give you a Graco stroller to use (which was nice for lugging around pool stuff since we had only brought our umbrella stroller). There are 5 pools, including one that's a mini splash park that are son loved. They do have childcare too. We opted not to do it, but we could still go to the daycare room with him, so we could go in and let our son play with all the toys if we were looking for something for him to do.
We got the deluxe family room, which has a separate bedroom (which we put our son in), and then the main room with the king bed that my husband and I had.
The downside is that it's not on the beach (it's on a river, about 3 miles from the beach). However, we were totally happy just to enjoy the pools. Also, I wouldn't say this is a "luxurious" resort (to me the decor was more IKEA-style), but it has been recently renovated and I had no complaints.
I really can't say enough about this place when you have kids - we can't wait to go back!
