Canners ... poll

What have you canned so far this season?  What are you waiting to come in to can?  And what is your favorite canning tool?

Re: Canners ... poll

  • So far I have done strawberry / blueberry / peach jam.  I have done 8 quarts of green beans, with hopefully 32 more to go and a batch of bread and butter pickles.  We are still waiting for the tomatoes to ripen and peppers to do pepper relish.

Right now I am loving my veg - o - matic slicer.  It is great for slicing cucumbers in about 1/8 of the time it took me to hand slice them.  If you find an older model in a consignment or thrift store I would jump on it!

  • So far, I've made dill pickles, and strawberry jam.  I'm not sure what I'll do next, but I can't wait for apples to be in season so we can make tons of applesauce.  Thinking about doing some salsa (I can water bath that, right?)

No favorite tool... I just use the basics

    Yes, definitely.

So far we've done pickles and squash relish.  We have TONS of squash relish.  I hope DH plans on giving it away for Christmas because there is no way we could eat it all.

Next up:  salsa, canned tomatoes, and maybe spaghetti sauce.  I don't think I'll do any jam this year unless someone gives us a ton of fruit and there's nothing else we can do with it.  Last year we made fig jam, blueberry lime, and tomato jam.  Tomato is my favorite; it's closest to strawberry.

  • I have never made jam.  I should.

I haven't done anything yet this year, but my plans are:

    Tomatoes

    Salsa

    Applesauce.  Lots of applesauce.

Pickles, if our current stash runs low.  I did a lot last year.

    I'm looking for suggestions too.

  • I haven't done a darn thing because of the move, but I hope to make strawberry jam (J's favorite) and something with corn since we have a corn farm down the road from our house & it's reasonably priced and delicious.

ETA:  My favorite canning tool is probably my jar lifter.  :)

  • This is what I have done so far:

2 half pints balsamic and black pepper strawberry preserves

1 qt + 1 pt strawberry lemonade concentrate

5 half pints strawberry honey butter

    4 half pints strawberry butter

2 half pints vanilla rhubarb jam

    1 qt chive blossom vinegar

I will be doing 6 more half pints of strawberry jam tonight. It is currently macerating in the fridge.

I will be doing more rhubarb, pickles, dilly beans, asparagus, and peaches.

  • Oh, and I think my favorite canning tool right now is probably my canning funnel. Followed by jar lifter and lid lifter.

The stuff I tasted while I was making it was so freaking good. I think it will be excellent over pork.

  • I've done a bunch of strawberry jam and 14 quarts of dill pickles.  I'm tackling tomato sauce this weekend.

Due to rain, our gardens were planted very late in Ohio.

I still plan to can green beans, peaches, okra, grape jam, and applesauce.
