Veggies (if small I wrap them in tin foil, like squash, zucchini), corn on the cob, asparagus with olive oil or balsamic
I make a chicken dish (grill the chicken and in tin foil I grill cherry tomatoes and basil with olive oil in tin and melt mozz cheese over the chicken at the end. It's super yummy.

We do a lot of chicken on the grill. Sometimes just marinated, sometimes stuffed, sometimes lightly seasoned to cut up for salad. We also do steaks, burgers, hot dogs/brats, and beeg or chicken kabobs with potatoes, peppers, etc. Occasionally fish, ribs, or pork chops, too.

Get one of those metal grill pan with the holes in it. We use that and cook just about anything in it... shrimp, steak, chicken, veggies (zucchini, onions, peppers, asparagus, etc.), peppers/onions/mushrooms for toppers, basically anything you can imagine. I'm making a recipe later this week that I found where you cook cherry tomatoes, steak cubes, pearl onions, and mushrooms alltogether with some balsamic and spices.
Since we're talking about grilling I have to put this recommendation out there. Weber makes a line of marinades and the chipotle one is AWESOME. I think we've eaten it every week since DH found it. I was nervous because I don't do spice at all but this isn't spicy at all but it's really flavorful.
In addition to the above, we want to try doing pizza on the grill. Previously, we have also thrown peaches/nectarines, plums, and pineapple on the grill. it really brings out the sugars and they get even sweeter. They say watermelon is really good on it, too.

Re: What do you cook on the grill
I put everything on the grill (no dishes to wash)

They make little "cages" that you can put the fish in and flip so it does not stick to the grill. Also the scallops are good on a kabob stick.
