Anyone been recently? We are heading to Florida in less than two weeks (gasp) and have been on the fence about going. What do y'all think? Still fun for two childless adults? Or would you recommend Epcot instead? And any tips or hints on when to go? I wonder if one day of the week is better another...

I was just at the Magic Kingdom in May and I saw couples signing in at the front of the park for an 'Amazing Race' type event. I don't know if it was a one-day thing or just a weekend thing. It looked like fun...might be worth checking into...
Also, Downtown Disney/ Paradise Island is definitely for adults.
And, I love the Disney's Animal Kingdom.
Universal Studios is also adult/no kid friendly with lots of roller coasters.

I think I liked all of them equally, and for different reasons, but I went with a small child, so take that for what it's worth.
All the different countries are certainly a sight to see, and most of them have excellent restaurants in them. Test Track is really cool, Mission Space was really cool, but those are about the only roller coaster type rides in Epcot.
There are more rides in MK, ones that I even loved like The Haunted Mansion, Pirates of the Caribbean, Thunder Mountain, Splash Mountain, Space Mountain, and the Jungle Cruise (and lots of other smaller kiddie rides like It's a small world).
Hollywood Studios has some awesome rides and fun things to see, all pertaining to TV/Movies- the Hollywood Tower of Terror was my favorite ride, Rock n'Roller Coaster was AMAZING, the Great Movie Ride was pretty cool.
So it really depends on if you want to ride a bunch of rides or not.
If you're into animals, Animal Kingdom was really great. They have a short "safari" that was really neat, and the River Rapids was fun, and the Everest ride was awesome.

This place was super hoppin and a lot of fun for adults, some bars and that kinda restaurants. My all-time fav place we ate at was Raglan Road.
