coconut milk will, in fact, make pudding

Oh my gosh, so reading online it's pretty much you cannot use milk substitutes to make Jello pudding (Vanilla is dairy -and soy- free). But I just make some and my family agrees. It's yummy. I used Silk Pure Coconut Vanilla & Cook 'n Serve Vanilla Jell-O Pudding.

    The cook and serve is different. The regular instant stuff will not set up without actual milk. It's a reaction between the milk protien and the pudding mix that helps it set up without cooking. Glad your family enjoyed it!
