A friend of mine just made these for me, and I was amazed by how delicious they were. Thought I would share the recipe. Be sure to see her notes at the end about the icing.
Non-Dairy Brownies
1/2 cup non-dairy margarine
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
Icing
3 tablespoons margarine, softened 3 tablespoons unsweetened cocoa powder
1 tablespoon honey
1 teaspoon vanilla extract
1 cup confectioners' sugar
Directions:
1. Preheat oven to 350 degrees. Grease and flour an 8x8 pan
2. In a large saucepan, melt 1/2 cup margarine. Remove from heat and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt and baking powder. Spread batter in prepared pan.
3. Bake in preheated oven for 25 to 30 minutes. Do not overcook!
4. To make frosting (make while brownies are cooking): Combine 3 (or 4) tablespoons of margarine, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla and 1 cup confectioners' sugar. Frost brownies while they are still warm so frosting will melt and makes it easier to spread. As it cools frosting will harden.
NOTE: I added 1 more tablespoon of margarine to frosting because it seemed too dry. Since I used a dark pan I preheated oven to 325 and baked them for about 27 minutes (check at 25 minutes). I did not use the 8x8 since I have a cut-out brownie pan. You will probably have bigger (thicker) brownies in the 8x8 pan and it might take longer to cook.

I wonder if I could substitute the flour and still have them taste good.
