I thought it would be helpful to create a post about the 4th of july. We have 2 potlucks to go to over 2 days and would love some easy ideas. When we're home, I usually do several things (crockpot beans and fruit and then our own bbq stuff) but I'm lost for bbq's at other people's houses. (No bbq - just all potluck food).

Pasta salad with white pasta, tomatoes, red onions
This is my most recent obsession/pregnancy craving:
Greek Salad- tomatos, cucumber, red onion, feta, olive oil, vinegar, salt and pepper (my mouth is watering just thinking about this!)
A favorite amongst my regular Pot-Luckers is Bandito Beans. This link calls for Lima Beans, but I prefer Kidney as a substitute.

So, I sub whole Black Beans, rinsed/drained for the Black Eyed Peas. For the corn portion, I use the Mexi-Mix Corn that has red/green peppers in it, not the one with beans (hows that for a description?, I know it sucks). And instead of the Wine Vinegar and Salad Oil, I just use a good Italian Dressing and eyeball it and the Salsa/HotSauce. If I'm serving folks who can handle the heat, I also finely dice one jalapeno pepper, de-seeded and chill for at least 1 hr before serving. I also up the Avacado to 2, and plop the pits in the mix to try and keep it from browning too much.

For the 4th of July party we are going to, I'm planning to make the crazy looking cookies on the cover of Marth Stewart's July issue. My SIL and brother host a fabulous party at the compound they share with her parents out in the country. Baby pools, water slides, home made award winning beer and awesome food. Since SIL and her mom are such incredible cooks, I try to just lay low and share something easy but those cookies are calling my name.
We make this coleslaw with pulled pork several times a year and love it:

And then I make this Orzo salad quite frequently for potlucks and get togethers, and very, very often get asked for the recipe. It's a favorite, and a go-to. And it's fairly easy...the only somewhat time consuming thing is chopping the red onions and red bell peppers (because you want them very small and kind of uniform). I use an onion chopper for them all now since I make this kind of often. It's really yummy though
