pg mamas - fave/easy lunches

I hate lunchtime. Every day I rummage through my fridge and cupboards trying to figure out something that sounds good for me to eat for lunch. Help! Inspire me!

E typically has fruit, cheese toast & yogurt.

  • do you not typically have leftovers from dinner?  that's what i eat, the majority of the time!
    Childhood cancer (DH) + chemo + radiation = 0 sperm.
    LO #1 - 1 unmedicated/self-monitored IUI w/ donor sperm.
    LO #2 - 1 m/c, 2 BFNs, 4th IUI worked (unmedicated/self-monitored with new donor sperm).
    Life is beautiful!

  • I almost always have salad fixings in my fridge. 

    I got to the hydroponic farm once a week, and buy enough lettuce for several salads...then wash it and chop it and keep it in a rubbermaid thingy in the fridge.  That makes it super quick to throw in a bowl and have for lunch.

    Today, I had pasta with a jarred sauce.  Paul Newman's marinara is all natural, and pretty tasty for a jarred sauce...and the rotini took all of 10 minutes to cook.

    I struggle at lunch too...especially if Caroline is having something I don't want.  There have been days when she had something totally awesome (the child loves her veggies at lunch), and I had a cheese sandwich with chips and salsa, lol.
