I've been craving macaroni and cheese like whoa. In fact I just ate a bowl of easy mac, and I liked it! I want to find a recipe for mac n cheese with at least some nutritional value in it, and my usual trick of just throwing broccoli in it feels insufficent.
Ideas?

That sounds really fantastic, and I might have to give it a shot! My H is extremely picky with his veggies. This with some broccoli instead of peas would go over really well, I think. (hope)

I actually have a batch of this in the fridge and plan on having it for lunch. I do use whole weat pasta.
The texture is different, but you really don't taste the squash at all. DH is picky about veggies and he likes this. And he's a blue box devotee.
Use whole wheat pasta, sub whole milk for ff, and use Olivio instead of butter.
But whatever you do...DO NOT use low fat cheese...bleh.
