Pregnant after a Loss

Need new dinner ideas.....

Hey ladies.  So, since I'm off from school now I really want to have dinner ready for my hubby when he gets home from work each night at 6:30.  I have around 5 meals that I feel like I rely on and I want to try some new ideas.  I love chicken but I honestly eat too much chicken.  Any ideas would be greatly appreciated!!

  • Some of my usuals: broiled salmon (on the menu tonight), turkey burgers w. avacado (tomorrow night), panko breaded pork chops (find on cooking light website), tuna melts. pasta carbonara. When I have no ideas I sit down with a cookbook on Sunday and tag 5 dishes for the week. I do tend to make the same things over and over.

    Thai wraps with tofu/tempeh/chicken and peanut sauce

    Stir fry

    Ravioli (I make pumpkin ravioli that is awesome!)

    Turkey burgers and homemade sweet potato fries

    Homemade pizza with basil pesto, fresh moz, kalamata olives, chicken, jalapenos, etc.

     Those are a few things that are easy and on the top of my mind. 

    After two losses, a rainbow arrived! DD born 11.5.11
    Dx with severe Asherman's syndrome after a botched PP D&C (pursuing med mal)
    Hysteroscopy Oct '13, not enough progress 
    Hysteroscopy Jan '14, given an end-of-the-road diagnosis
    Joined International Asherman's Association April '14 
    Not ready to give up yet.
    Hysteroscopy with Dr. Isaacson (an expert in the USA) 6.2.14: Good prognosis, at least 50% of cavity open.
    Repeat hysteroscopy scheduled with Dr. I on 6.16.14. Great progress. Unbenched!!!!
    Discussing actively TTC with DH after the heartache of the last year. We're both reeling.

  • Tacos are easy and quick.  So are fajitas.  Both can be made with chicken. Wink  I'm a big soup fan, even though that's not usual summer fare.  I also like crock pot meals. 

    Carbonnade is easy to make and a total man-pleaser.  You can make it in the crock pot as well.  Pulled pork is easy to make in the crock pot and you can freeze the extra for sandwiches.  I often use pork loin instead of pork shoulder as it's leaner.  I just use the McCormick's packet mix for it as it's super easy.  Roasts are always easy in the crock pot and making them that way keeps you from totally heating your house up.  All of these recipes make extra that you can put into packets and freeze for quick meals later. 

    Grilled steak is always a man-pleaser as well.  You can grill corn to go with it or go with the usual baked potato.  I also like fillet mignons, though they're really poor man's filet mignons.  Mom used to make them and always called them FM, so I was a teen before I realized they weren't.  You just take ground beef, season it how you want it (I use salt, pepper and a bit of fish sauce), form it into thick oval or round patties (the thickness of your bacon), and wrap them with bacon.  Secure the bacon with toothpicks and grill until cooked.  They're yummy!  They're also super fast to make and work well with ground buffalo (for the not-so-poor man's version).

    umm, pumpkin ravioli sounds so delicious! I've never heard of that before, can you share the recipe?! 

  • I was just thinking about making this https://www.bhg.com/recipe/pork/pork-chops-primavera/ (sorry it's not clicky) It's super yummy and takes no effort at all to make. I pretty much like any better homes and garden recipe... there have only been a handful of things from their cookbook that I have tried and decided not to make again.

  • I know you said you eat chicken a lot but I made these the other week and they were tasty!

    I made slow cooker ribs a few weeks ago and they were to die for.

    Stir fries are simple to make.  I usually serve the meat (chicken, pork or beef) and veggies over a bed of udon noodles.  YUM!
