Can I freeze a casserole that has sour cream in it?

I have a recipe for a casserole that is ground meat w/ tomato sauce topped with a mixture of sour cream and mozzarella cheese topped with cresent rolls.  Should I just freeze batches of the meat mixture and assemble the rest before baking or would it be okay to freeze it with the sour cream/cheese mix on top as well?  I'm assuming I should wait to add the crescent rolls until right before I bake it.

  • I personally wouldn't. I have known sour cream to be very bad at maintaining its integrity in response to heat or freeze.

    This - chances are it will separate and while it will still taste ok it will look unappetizing.
