We have been looking at crib mattresses and never realized how many horrible chemicals go into them. We have been looking at several brands that claim to be non-toxic, but then we find reviews about the "hidden" toxins in them. What did you end up buying? Thanks!

Organic mattress is the way to go, especially with newborns.
There is a brand called Naturepedic, that seems to be fairly popular with EFFers: https://www.naturepedic.com/
We have a 'mini' sized crib so it was kinda hard for us to find one. It's not organic, but I feel like it's better than some other options.

I just bought a natural latex one made by PureRest. I haven't used it yet so can't really say, but it seems really nice. It's covered in organic cotton and wool, so no plastics at all. It wasn't cheap but I'm hoping we get a lot of use out of it! Good luck.
