Recipe Monday!

I hope everyone had a nice weekend.  Does anyone have any good recipes to share?  Maybe something you made recently and really liked?  Any pizza recipes?

Fun question: How do you like your pizza?  Thin crust, deep dish, pepperoni, pineapple, anchovies...?

  • I love this! I am obsessed with cooking :) I always make WAY too much food for just the two of us...

     Lately we have been making a ton of thin crust pizzas. I use the whole wheat crust from Trader Joes. Favorite so far is EVOO, roasted garlic, goat cheese, asparagus, red onion, sprinkled with mozz and parm. Have also added chicken to make it more of a meal...

    Recipe:

    Spinach with Garbanzo Beans. Super easy, really healthy and cheap! My mother hates G beans but still loves this recipe.

    1 tablespoon extra-virgin olive oil4 cloves garlic, minced1/2 onion, diced (sweet is best)1 (10 ounce) box frozen chopped spinach, thawed and drained well (I double this b/c I love spinach - don't use fresh, I have, it doesn't taste as good!)1 (12 ounce) can garbanzo beans, drained1/2 teaspoon cumin (or to taste)1/2 teaspoon salt Heat OO in a skillet with onions and garlic about 5 minutes. Add beans and spinach (thaw and drain well). First time I made this it was a bit dry. To avoid adding too much oil I use chicken broth to get a more moist consistency. I prefer to smash the beans, but my sister smashes half and leaves some whole. Cook until nice and hot! Enjoy!!

  • Breakfast Muffin

    Ingredients:

    -English muffins
    -2-3 stalks asparagus per muffin
    -1/2 cup mozzarella cheese
    -1/8-1/4 cup milk 
    -Eggs
    -Smoked salmon or trout

    Cut you asparagus in half and boil until cooked. Toast your English muffin. In a frying pan, fry you egg sunny side up. Once the egg whites are cooked you know it's ready. In a small sauce pan on medium heat, melt together the milk and cheese until it is a nice smooth sauce. stirring constantly. Remove from heat while still mixing.

    On a small plate, but down the bottom half of the muffin, 1-2 small slices of smoked salmon or trout, the asparagus, egg and then pour on 2-4 tablespoons of cheese sauce onto the sandwich. Top it off with the top half of your English muffin, and enjoy!!!

    Fun question: Thin crust, not too much sauce or pepperoni, but lots of cheeeeese!!!

  • I made this potato salad over the weekend as a healthy alternative to the classic mayo version. It got good reviews from DH and my family. 

    As for the fun question - thin crust "the Lou" from Malnati's (spinach, tomato, and mushroom) Yum! Now I'm in the mood for pizza. 

    Red Potato and Tomato Salad 

    1 pound baby red potatoes, halved

    1 pint (2 cups) cherry tomatoes, halved

    3 scallions, thinly sliced

    1/3 cup pitted black olives, halved

    1/3 cup chopped fresh flat-leaf parsley

    1 tablespoon chopped fresh basil leaves

    1/4 cup extra-virgin olive oil

    1 large lemon, zested (I add some juice too)

    Kosher salt and freshly ground black pepper

    Add the potatoes to a medium saucepan with enough cold water tocover by at least 2 inches. Set the saucepan over medium heat. Bring the waterto a boil and continue boiling until the potatoes are tender, about 15 to 20minutes. Drain the potatoes in a colander and allow them to dry for 5 minutes.

    In a serving bowl, add the potatoes, tomatoes, scallions,olives, parsley, basil, olive oil, and lemon zest. Toss gently untilall the ingredients are coated and season with salt and pepper, to taste.Refrigerate for 1 hour and gently toss again before serving.

     

     

  • I like really simple recipes and these always come out sooo good. I've only tried this with lean beef:

    Meatballs

    Ingredients

    • 2 tablespoons olive oil
    • 1 (20 ounce) package ground turkey or lean beef
    • 1 egg, beaten
    • 1/3 cup Italian seasoned bread crumbs (I add some extra seasoning like oregano)

    Directions

    1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
    2. In a medium bowl, mix together the ground beef, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
    3. Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.
    Answer: I love pesto pizza with crispy crust but I like all kinds. I've made tiny personal pizzas before on bagels, that's sort of fun.

    I use the whole wheat crust from Trader Joes. 

    That's what we use too.  Before discovering it I would try making my own but it would never turn out right.  Pre-made dough is SO much easier (not to mention pretty cheap).

    We really like sugar snap peas (I usually buy a big bag of them from Costco) and this is one of our favorite recipes so far:

     

    Sugar Snap Peas with Red Onion & Feta

    1/2c thinly vertically sliced red onion

    12oz sugar snap peas

    1 tablespoon lemon juice

    1 tablespoon extra virgin olive oil

    1 teaspoon white wine vinegar

    1/2 teaspoon honey

    1/4 teaspoon kosher salt

    1/4 teaspoon black pepper

    1/3c crumbled feta cheese

    Put onion in a bowl of ice water for 10 minutes.  Drain and dry.  Whisk lemon juice through black pepper.  Cook peas in boiling water for 2 minutes.  Drain, plunge in ice water, drain and dry.  Combine peas, onion, and feta, add dressing and toss well.

     

    Fun question: I like just about any kind of crust, except the really thin, crunchy kind.  For toppings I like MEAT!  DH calls me a meat-asaurus.  My favorite combo is probably pepperoni, sausage, and mushroom.
