We are just starting to potty train, so I have no advice about that.
My DD loves her Magna Doodle for car rides. She only gets it then, so it's a special treat to her. She also got a Leap Frog laptop for her birthday, again it's a car toy only. Those seem to keep her pretty entertained.
DS has a mirror that plays music that he looks at. I also have all kinds of toys attached to a string of links, he can usually entertain himself pretty well.
Other than that, I haven't taken a long car trip with them both yet (longer than 2 hours). I'd try to plan some travel time around naps, though. Good luck!
Dual DVD player. And realizing that what was once a 6 hour car ride will now be a 10 hour car ride We make stops for everyone to get some fresh air and walk around.
We just did a 6 hour car ride with our 9 month old. We stopped every 2 hours or so. I found parks close to the freeway and we stopped to do diapers and let him crawl around. I really think this was the key to the trip's success. In 14 hours of total travel time, we only had 15 minutes of crying from our normally fussy son.

we just did a 10 hour car trip with a 14 month old and a 3 year old...
the baby is still rear facing.
my oldest had a dvd player, books, and a magnetic board with letters, and lots of snacks
my youngest had books that made noise, play keys that make noise, an airplane, and lovies to take lots of naps.
kiddie music and acting like a kid in the front is key!!
it also helped when i'd hop in back and make them laugh.
